Recipe Courtesy of Paula DeenServings: 15 to 20 servings
Prep Time: 40 min
Difficulty: Easy
1 cup chopped pecans
1/2 cup milk
1 egg
1 cup sugar
12 tablespoon (1 1/2 sticks) butter
1 16-ounce box graham crackers
1 cup or 3 (1/2-ounce) cans shredded coconut
Topping:
2 cups powdered sugar
1 teaspoon vanilla
4 tablespoons (1/2 stick) butter
3 tablespoons milk
Line a 13 x 9-inch pan with whole graham crackers. Melt butter in saucepan and add sugar. Beat egg and milk together; add to butter mixture. Bring to a boil, stirring constantly. Remove from heat. Add nuts, coconut, and 1 cup graham cracker crumbs. Pour over crackers in pan. Cover with another layer of whole graham crackers. Prepare topping.
Topping:
Beat all ingredients together and spread over top layer of crackers. Chill. Cut into squares.

I received this recipe from a family friend in florida. I worked at a nursing at the time in the kitcken and decided to make them for the residents. They were a big hit and had requests to make them quite often.

I am 11 and was looking for non-bake desserts and when i saw this my taste buds tingled! I made them and they turned out ok apart from the fact i did not know where to get graham crackers so instead i used saltine crackers:( they did not turn out as good as i imagine. But when i finally got them after months of hoping they might just be in stores they finally did! They turned out great! I love Paula Deen cause she is such an inspiration with how she lost all that weight! Keep it up!:D Love Tasha,11

anyone know if you need to adjust the ingredients if you don't use the coconut? (yes, I know I saw the comments about those who think you're nuts if you don't love coconut but I simply can't stand it, even the smell of it).

Dear Paula, I'm an EMT in North Carolina and am always trying to figure out something to eat on the go. There are alot of times that we just don't have time to stop for breakfast, lunch, or dinner--unless it's fast food. I'm looking for something fast and healthy that I can pack in a bag. I'm tired of the same old things everyday! Also my doctor says I need to eat 6 times a day. That's every 21/2 to 3 hours. Trying to lose weight and the doctor says my problem is not eating enough. Ok...so with all this talk about these tasting like German Chocolate Cake, I decided to add 1 1/2 T. cocoa powder to icing and all I can say is "O BABY!" I've been baking since Dec. 1st and have many fans. My friends keep asking, "What's next?" Thanks for the great recipes!

I made these for my ladies SS class today. They loved them! The filling really does taste like the filling in German Chocolate Cake. Next time, I will probably cut the topping recipe in half. I had enough to completely cover, and it seemed a bit too much. Thanks for this recipe!!!

When you were making the Low Country Cookies, I wanted to make them right-a-way. but didn't have all the ingredients. I'm making them tonight June 21, 2011 and I hoping they will turn out as good as they look. My husband doesn't like coconut, with the exception of German Chocolate Cake. I'm also hve high cholestrol and high blood sugar. And we are both trying to loose weight. I know this receipe might not help, but I must try these, even if it's only once. Do you have some receipes for a weight watcher, cholestrol and blood sugar problems. I love your show and need some tips. Bonnie
