Ingredients Add to grocery list

1 pound lean ground beef
1 (6-ounce) can tomato paste
1/2 cup chopped Vidalia onion
1/2 cup chopped green bell pepper
1/2 cup quick-cooking oats
1 egg, lightly beaten
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup ketchup
2 tablespoons packed light brown sugar
1 tablespoon Dijon mustard

Directions

Preheat the oven to 375 degrees F.

In a large bowl, combine the ground beef, tomato paste, onions, green pepper, oats, egg, salt, and pepper. Shape the mixture into a loaf and place it in a 9 by 5-inch loaf pan.

In a small bowl, whisk together the ketchup, brown sugar, and mustard. Slather the glaze on top of the meat loaf and bake until the meat loaf is firm and cooked all the way through, about 1 hour. Serve hot.

I've made this many times and passed it on to other family members. It's the best meatloaf I've ever had or made in my 61 years! It's always moist and tasty. It's a favorite for dinner and we could eat it 7 times a week. Also makes a great meatloaf sandwich the next day.....IF there's any left!

I've been making this recipe for years! It's the very best meatloaf recipe out there...simple, moist and delish! It makes great leftover meatloaf sandwiches the next day too. I've also used ground turkey when I'm in a healthy mood!

Aunt Peggy's meal loaf is awful. too much tomato paste. We couldn't eat it so mixed it with rice and cheese the next day and then it was edible.

I made this recipe for the first time last night and absolutely love the flavor. The only problem I had was, after removing it from the pan and letting it rest, it fell apart when I tried to slice it. When eating it right away it isn't that big of a deal. However, I love cold meatloaf sandwiches for lunch. Even cold it fell apart. Is there anything I can do to help bind it together a bit more? An extra egg perhaps?

This meatloaf stuck together like glue. It needed more fillers. I used really lean meat to make it more healthy but it just had no taste. Normally, I love Paula's recipes but not this one.

My family loves meatloaf, but I have always had to make 2 separate meatloaves because my son has autism and could not have the breadcrumbs that I would normally put in it. When I saw you using the oats I was so happy I could finally make one meatloaf for the whole family to enjoy and they all love it!
