Aunt Peggy’s Cucumber, Tomato and Onion Salad Aunt Peggy’s Cucumber, Tomato and Onion Salad


Servings: 4 to 6 servings
Prep Time: 15 min
Difficulty: Easy

Ingredients Add to grocery list

1 pound cucumbers (about 2 cucumbers), peeled and thinly sliced
1 pint cherry tomatoes, halved
1/2 Vidalia onion, very thinly sliced
2 tablespoons chopped fresh parsley leaves
1 tablespoon apple cider vinegar
1 tablespoon olive oil
Salt and freshly ground black pepper

Directions

In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.

PAULA YOU WERE FIXING I DO BELIEVE IT WAS SOME TYPE OF MONKEY BREAD IN A BUNDT OR ANGEL FOOD PAN, I GOT IN ON THE MIDDLE AND THEN LOST OUT. In my family we use my mother-in-laws cranberrry salad recipe. It is so easy. However that said, I made it for the first time as my husband & I were going to a party..it is supposed to congeal..mine didn't, but I didn't know this until I turned it out on the serving plate and heard this sound..sluurrrp...I knew. I quickly grabbed by soup tureen with the ladle and poured it into there. I didn't bring any home, so I guess they enjoyed it!!! IT IS: l can whole cranberry sauce, heated on low, add to this 1 package of plain geletin, stir until it is all dissolved. Add to this chopped fine celery, 2 stalks, 1 apple and nuts (I use pecans) fine. Pour this into a mold and refrigerate over night. It will come out fine..this first step is the one I put in to be sure the geletin DOES dissolve so it will congeal..it works every time. Better if made night before...can use deep bowl if you don't have a mold..ENJOY!!

if you use seasoned rice vinegar it will be even better.I like to add either smoked paprika or soy sauce and sesame seeds. I skip the oil.my mom makes it with the vinegar and sugar to taste.

At first I didn't think a tablespoon of oil and vinegar would be enough to dress this salad but after marinating for the required ten minutes I realized it was perfect. I like that it doesn't use sugar as many of these type recipes do. The addition of vidalia and parsley was a nice touch. I had some heirloom tomatoes on hand, a variety of colors and types both cherry and pear and I used those along with the cucumbers and other ingredients. It was summer in a bowl. I'll be making this again. I might also try it with basil sometime instead of parsley since basil and tomatoes are a perfect match.

It's wonderful! Fresh, plenty of flavor and I can use up our excess of cherry tomatoes from the garden. I might add some fresh corn next time. I definitely need to figure out how to can it for the winter.

Very similar to my mom's recipe from her mother and her mother's mother and so on. Old recipe. Instead, we only chop cucumbers, any tomatoes, onions(or red onions), green bell peppers finely (not minced). We use apple cider vinegar and season with salt and pepper to taste. Eat like a salad itself, put on bed of lettuce or even put some on top of cooked garden-fresh black-eye peas as we call "Chop-chop" salad. Never use any oil. It's tart and sometimes, we will put some dash of sugar to sweeten it. All from the garden that men set up as I was growing up, it sure brings old fashioned memories!!!

I must try this! Sounds yummy too. I make this cucumber/onion salad using any nice, tender chopped tomatoes; sliced green onions (some tender green tops included); diced, peeled cucumbers; sprinkle of dried dill weed, salt, pepper, dash of sugar; add real mayo to desired consistency. It is a wonderful hot weather salad. Thanks Paula, for this wonderful site where we may share our ideas also!

My granny made a cucumber salad that I loved as well I love macaroni salad. My granny always made it. Luckily she gave me the recipe. When I got married I ask her for her recipe and it always brings back great memories of her teaching me how to cook and prepare her recipes. Many of which I had to measure the amounts out of her hand do that I could acheive that exact flavor that we all love. She was always cooking and loved it.
