Zesty Cucumber Salad

Ingredients

  • 3 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 3 cucumbers, peeled and thinly sliced (about 2 lbs)
  • 1 (10 oz) container grape tomatoes, sliced in half
  • 1/2 medium Vidalia onion, very thinly sliced into half moons
  • 2 tablespoons dill, chopped
  • kosher salt, to taste
  • black pepper, freshly ground, to taste

Preparation

Step 1

In a large bowl, whisk together the vinegar, olive oil and sugar.

Step 2

Toss in the cucumbers, tomatoes, onion and dill, and season with salt and pepper. Let marinate at room temperature for 20 minutes before serving.

This looks delicious, will make when I can find some good cucumbers....may have to wait till summer tho.....I like the small cucumbers....the pickling kind are the best.....so tender.....try those sometimes in this recipe.....

This salad is the balm......absolutely love it!! My Mother would make it using sour cream in place of olive oil....it was also the balm!!!!

The highest rat

The highest rating! My Daddy's favorite summertime "go with", made from the garden vegetables. We prepared it and kept in a Mason jar, in the refrigerator. It was always ready and available! Now you can make it using organic vegetables and serve it year 'round!
