Recipe Courtesy of Paula DeenServings: 6 servings

1 teaspoon Paula Deen Hot Sauce or to taste
1 tablespoon grated fresh ginger
6 tablespoon freshly squeezed orange juice
1 tablespoon grated orange zest
6 tablespoon olive oil, plus additional for brushing
6 (6-ounce) tilapia fillets
1 teaspoon salt
freshly ground black pepper
mango coconut rice
Place the fish in a large nonmetal dish. Whisk together the 6 tablespoons oil, the orange zest, orange juice, ginger, hot sauce, salt, and pepper, to taste; pour over the fish. Cover and marinate in the refrigerator for 30 to 60 minutes.
Meanwhile, prepare grill. Brush the fish with additional oil. Grill until fish just flakes when tested with a fork, about 5 minutes per side for each inch of thickness.
Serve alongside Mango Coconut Rice.

When I get to the end of my week and need a quick fix dinner I usually go for a nice chicken noodle soup with crackers or corn muffins.....my chicken noodle is different than most because I add cabbage, broccoli and egg noodles.....for the creamiest texture I stir in a heaping serving spoon of Ricotta and 1/4 c evaporated milk. I also use homemade stock so that I can bump up the flavor and finish it all off with a dash of Tony Cacheries cajun seasoning and a sprinkle of shredded parm. Let me know what you think of it.....my entire bunch eats this....

I say SALMON! Mango salsa and a whole grain rice! Make your "salsa" early and let chill(mango instead of tomatoes, sprinkle with lemon juice!). Start your rice. Heat oven to 350, season your salmon filet with seasoned garlic salt, butter, prigs of fress dill. Bake 25 minutes in foil sealed packet.

Paula,one of your most loyal fans! Love your recipes! Can't wait to try the talapia and orange/mango rice dish,sounds really yummy!Hope you have fun on the criuse.
