1 box couscous (garlic, parmesan), cooked
1 can chick peas
1 red pepper finely chopped
1/2 Vidalia onion chopped
1 English cucumber peeled and seeded, finely chopped
1 chopped tomato
1/4 cup fresh parsley chopped
Juice of 2-3 limes
1/4 cup olive oil
1/2 cup crumbled feta cheese
Salt and freshly ground pepper
In a bowl, add all ingredients. Toss and add oil or lime juice to taste.

My entire family loved this. It is even better when allowed to sit a day or so. I didn't have limes so I used lemons instead. Make a big batch, the kids will keep coming back for more. SOOOOO GOOOOD!!!!!!!!!!!!!
