Tomato Pie

Two cheeses and fresh basil bring out the goodness of the tomatoes.

Ingredients:

1 cup grated mozzarella
1   9-inch prebaked deep dish pie shell
1/2 cup chopped green onion
10   fresh basil leaves, chopped
4   tomatoes, peeled and sliced
1 cup grated cheddar
1 cup mayonnaise
salt and pepper

Directions

Preheat oven to 350 degrees.

First, blanch the tomatoes and slice. Place the tomatoes in the collinder to drain.

Using a medium sized bowl, mix mayonnaise, cheddar cheese, mozzarella cheese, salt and pepper.

Layer the tomato slices, basil, and onion in pie shell.  Season with salt and pepper.  Spread the mayonnaise and cheese mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm.

Absolutely wonderful recipe, took it to a family reunion and it went over great. Next time I will put feta cheese on instead of cheddar, feta seems to give it a little greek kick. And noothing goes great with tomatoes like feta cheese and basil. Thanks paula.

My husband loves loves loves tomatoes and I served him this and he looked a bit skeptical at first but it was love at first bite. Make sure you bake it long enough it is warmed through completely or it is pretty bad. At least 4 thumbs up (mine and hubby's) for this recipe

Soooo good. I added crumbled bacon but will leave it out next time. It added nothing but calories to this dish imo. The flavors and the textures of the recipe as is are really wonderful.

A real winner at our house and at my workplace. My wife added some smoked bacon bits. I won't tell you it's better...but I DID tell her it was!

Sooooo good!!!!!! Saw the recipe in a magazine but looked up Paula's on computer. Am really glad I did. Could have eaten the whole pie. Can't wait to try the Vidalia onion pie. I am sure it will be just as good.

I have been making this ever since I read it in one of Paula's first cookbooks. My only problem is that I cannot make it real often, because I could eat the whole pie alone! I always squeeze the tomatoes, after peeling them to get rid of extra mositure and seeds. One of my top favorite recipes from Paula. Very consistent.
