2 cup dried elbow macaroni (4 cups cooked)
1/3 cup grated Cheddar
1/3 cup grated Swiss
1/3 cup grated Jack
1/3 cup grated Colby
1/3 cup grated Muenster
1/3 cup grated Gouda
1/2 cup sour cream
4 tablespoon butter, cut into pieces
6 eggs
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup milk
Nonstick spray
Preheat oven to 350 degrees F.
In a large pot, bring water to a boil. Season water with salt and cook macaroni until al dente, about 10 minutes. Drain pasta and place in a large bowl. While pasta is still hot, add all cheeses. In a separate medium bowl, using a whisk, combine the sour cream, butter, eggs, salt, pepper and milk and add to the macaroni mixture. Spray casserole dish with nonstick spray and pour macaroni mixture into the dish. Bake for 30-45 minutes or until golden brown. Top with additional cheese, if desired.

I usually hate when people review recipes and don't follow the exact recipe at least the first time they make it but I just HAD to review this mac and cheese recipe. I followed the basic format of the recipe except used only mild cheddar cheese and only 1 egg (i didn't have 6 eggs available). This is BY FAR the best mac and cheese recipe I've found, and i've tried A LOT, at least 20+ recipes. My boyfriend is a big fan of baked mac and cheese but none of the other recipes i've tried seemed to have enough flavor or be creamy enough but this one it and definitely doesn't disappoint!

Hey Paula,
I have made this wonderful dish numerous times for my family and myself and it is always a big hit. I recently made it with smoked Gouda and OMG it went through the roof! I made a pan today for a Pot Luck at work and every one is "yummin!" Hey, I better go get me some before it is all gobbled up!

The cheeses in this recipe create a wonderful flavor! The only change i made the second time was 3 eggs instead of 6 and two cups of milk to make it a little creamier. Very enjoyable!

Be cautious if making this... it bakes like an egg cassarole. Little bit disappointed because we just wanted some cheesy, creamy, mac and cheese.

There is definitely a typo somewhere. I doubled the macaroni and left everything else the same (and used the cheeses I had on hand). My family liked it! It is not close to being dry, so I am not sure why it was criticized for that. I might use 4 or 5 eggs next time instead, but it was yummy!

I've been making Paula's mac & cheese for a while now and it always turns out so delicious! A few modifications that I make: I reduce the eggs to 4 or 5 and substitute Egg Beaters for half of them. Use 2+ LBS of your favorite cheeses. This Thanksgiving I used 1 lb. sharp cheddar, .75 lbs of white cheddar, 1/2 lb of colby jack, and 1/4 lb of applewood smoked cheddar. Yummy!

I made this for thanksgiving, wow! was I dissapointed!way too many eggs,I wish I had read the reviews first!! my mom has a great mac& cheese, but I had to make this expensive egg casarole because I trust paula, I have a huge pan left, no one ate it!I will not make this again.

The flavor was okay, but it was VERY dry and I can make better mac & cheese on my own without buying a bunch of expensive cheeses. This is a FAIL for sure!
