Southern Fried Chicken

This is the ultimate Southern entree. Enjoy!

Ingredients:

Paula Deen House Seasoning
2 1/2 lb chicken, cut into pieces
2 cup self-rising flour
1 cup hot red pepper sauce
3   eggs

Directions

Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.

In a medium size bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 1 cup). Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour. Place the chicken in the preheated oil and fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. Approximate cooking time is 13 to 14 minutes for dark meat and 8 to 10 minutes for white meat.

My husband requests this all the time. I only use a half cup of red pepper sauce so it will not too spicy for our kids.

i am now famous for frying chicken in my home town. i have used this recipe for a couple of years now and everyone loves it. i cooked for the local Elks lodge and was told by several members that it was the best fried chicken they had ever eaten. the one thing that makes a great difference is using peanut oil to fry it in. thanks Paula for another wonderful recipe.

My husband discovered this when he wanted to cook for his employee's one weekend. I now become very angry if he does not bring any home or cook this at least twice a month. I will NEVER eat fast-food chicken again. The hot-red sauce is deceiving as an ingredient. It's not spicy at all when cooked. I would rate this higher, but it only goes up to 5.I would use the turkey deep frier if you have one. Much easier.
