Southern Fried Chicken

This is the ultimate Southern entree. Enjoy!

Ingredients:

Paula Deen House Seasoning
2 1/2 lb chicken, cut into pieces
2 cup self-rising flour
1 cup hot red pepper sauce
3   eggs

Directions

Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.

In a medium size bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 1 cup). Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour. Place the chicken in the preheated oil and fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. Approximate cooking time is 13 to 14 minutes for dark meat and 8 to 10 minutes for white meat.

I've made this recipe several times and it's the BEST!!!! Everybody loves it, and the hot sauce gives it just a little bit of a kick of flavor...yum!

Like another poster said, it is much better soaked in buttermilk. Good, but in no way does it come close to my mother's fried chicken (extended family consensus.)

This Hot chicken recipe was good. But Paula's Grandmothers Recipe for fried chicken is one of the best. The recipe is good at reunions and church dinners every time. We ate at your restaurant back in March 2010 and the food was wonderful. We hope to eat there agin next time we are in Savannha. Thanks Paula. Give your family a big hug from us. Pennu

I 'm a transplanted Yankee but I can fool alot of southern friends when I use Paula's recipe for fried chicken. Just be sure to slap some flour on your face so everyone thinks you spent all day cooking it !

I was lucky enough to attend a taping of Paula's Party in Savannah a few years ago. Lunch was served from the Lady and Son's and it was this fried chicken. OMG it was so good!!! I am as southern as it gets, but I had never had fried chicken this good.

Paula, I have been using this recipe for at least a year now. I also go lighter on the hot sauce and use only 1 egg. I also soak my chicken in salt water at least 1 hour before cooking. After it is golden brown when frying, I put it on a rack and finish it in a 350 degree oven. That way the grease also drains off. My family ALWAYS ASKS FOR PAULA'S FRIED CHICKEN, my name is also PAULA.

I love this chicken and so does my family. I also use worcheshire with it when I fry shrimp or chicken strips. I just make the egg mix "muddy".

This recipe was very good. I had the lunch buffet at the lady and sons in Ga. I was very disappointed with the food. The only good part was that I was able to meet Bobby and Jamie who were there that day. Popeyes chicken is better than The Lady and sons.

We first saw Paula fix this chicken on her T.V. show and guessed at the ingredients as we hadn't written it down. It then appeared in her magazine and we ate it at The Lady & Son's in Savanna while taking our army grandson out to dinner there. It is absolutely the most amazing chicken recipe we have ever tasted. You would think that much hot sauce would burn you up, you don't even know it's in there. OUTSTANDING and my husband has won a James Beard Contest! My husband had been making this recipe for a few years now. We downloaded off of the website. Everyone has loved it!!! He even has taken the stuff with him a couple of times when he goes camping with the guys. He is a hit everytime. He does put less hot sauce when he makes it for home because some of us can't handle a lot of spice. I think he does 1/2 sauce and 1/2 water...I think he heard Paula say something about doing that on one of her shows one time. Thanks for the great recipe!

I have not tried this recipe yet but I am sure it will be good. I just want to comment to the person that said they will not be going back due to having a burnt crab cake. I will try this and see if it is as good as these people say it is. I usually soak my chicken in buttermilk first, but to each his or her own. I also ate at The Lady and Sons and was terribally disapointed. Had crab cakes that were served and the burnt side was turned down in an effort to hide the surprise. Will not go back. I am from Memphis, Tennessee but now live in Monterey, Cailfornia. There are no restaurants out here that have fried chicken other than fast food ones. I looked this recipe up and tried it....OMG!!! As another reviewer said, I am now famous for my fried chicken! A local chef was a guest for dinner one night and even he said it was the best he ever had. The peanut oil is so important! Now I have friends that bring me gallons of peanut oil in hopes I will fry some up!

i am now famous for frying chicken in my home town. i have used this recipe for a couple of years now and everyone loves it. i cooked for the local Elks lodge and was told by several members that it was the best fried chicken they had ever eaten. the one thing that makes a great difference is using peanut oil to fry it in. thanks Paula for another wonderful recipe.

My husband discovered this when he wanted to cook for his employee's one weekend. I now become very angry if he does not bring any home or cook this at least twice a month. I will NEVER eat fast-food chicken again. The hot-red sauce is deceiving as an ingredient. It's not spicy at all when cooked. I would rate this higher, but it only goes up to 5.I would use the turkey deep frier if you have one. Much easier.
