1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry-flavored instant gelatin
1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water
Strawberry cream cheese frosting, recipe follows
Strawberry Cream Cheese Frosting
1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
1/2 teaspoon strawberry extract
7 cups confectioners’ sugar
Freshly sliced strawberries, for garnish, optional
Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.
Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
For the frosting:
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and the strawberry extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioners’ sugar, beating until smooth.
Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

I actually made this with "blackberry fusion" jello because that was all that I had on hand. I also used only a 10 oz. frozen strawberry package. I added a bit more oil to make up for it. It was still delicious!

This was my first time making this cake. My mom used to make it for me and and brother and it was so delicious! She did warn me that the frosting recipe is REALLY sweet. So I decided to buy one can of strawberry frosting and one can of cream cheese frosting from the store and mixed them both together with a little left over puree. I wanted to make sure I had enough puree so I added about 7 cut up fresh strawberries and this might sound crazy... but I actually added 2 strawberry popsicles that I had in my freezer. It helped make more puree and added more strawberry flavor! I had to bake for a total of 31 mins for the cake to done all the way. 20 mins didn't cut it for me. Cant wait for my boyfriend to try it tomorrow!!! Thanks Paula!!!

My cake is delicious, but didn't seem to rise well, and kind of sunk in the middle.I can use thick buttercream to solve the middle problem, but I wonder if I used too much puree? It made absolutely amazing cupcakes. My goodness, they are grand.

I've made this cake many times but instead of cream cheese icing I make whip cream from scratch for the icing. Much better and everyone just loves it.

Glad I thought about visiting this site before preparing this Strawberry Cake. I am looking forward to it, but need to be sure about something: the recipe, listed in the 'Hall of Fame' in the 5th Anniversary Cooking with Paula Keepsake Edition, indicates that the cake itself should have one 10oz package of strawberries, eventhough this recipe as printed here (online) indicates one 15oz package of strawberries. Which is it? and if I only use the 10oz package that I have, will my cake tastes just as good (or better)? I would appreciate a response from anyone who knows. Thanks so much!

love this! i saw Paula make this cake--box mix, strawberry puree: okaay. then instant strawberry jello packet: INTRIGUED! MUST! MAKE! So I did. Such an easy cake to make, and I love that it can transform a box mix into something special. I did make one large adjustment: I did NOT use 7 cups of sugar in the frosting. I stopped at less than 1 cup of powdered sugar, and the frosting was just fine (way sweet enough). I don't know if it's my climate, but my frosting firmed up just fine. And I really appreciated the quantity of frosting, because for some reason, i never have enough frosting for my cakes, and this time, I had just enough! I made this for my daughter's sweet 16 surprise dinner party and it was a huge hit!!! I wanted something girlie yet elegant and this did the job. What was even better was how delicious it was! I really loved the cake, however the frosting was way to sweet and I could really taste the powdered sugar, could the measurements have been wrong? I need to come up with a better frosting, any suggestions?

Suggestion, Try ADDING Wilton Meringue Power to THICKEN the Frosting. If too runny. Where you live, and weather can make a difference on how frostings stay thick. Cake Decorating classes teach you this. 1 - 3 Teaspoons.
