Ingredients Add to grocery list

1 tablespoon olive oil
1 tablespoon butter, plus more for topping
1 small onion, chopped fine
2 garlic cloves, chopped fine
1 1/2 cups leftover ham, diced
2 teaspoons fresh thyme leaves
2 (15-ounce) cans white beans, drained and rinsed
4 cups low sodium chicken broth (or homemade)
1 bay leaf
4 cups fresh collard greens, cut into thin ribbons (can substitute one can of cooked collard greens)
Kosher salt and freshly ground pepper
8 tablespoons butter for garnish

Directions

In a heavy bottomed soup pot over medium heat, cook onion, garlic, ham, and thyme in oil and butter, stirring occasionally, until onion is softened, about 4 minutes.

Add beans, broth, bay leaf, collards, salt and pepper (to taste) and simmer, uncovered, stirring occasionally, 20 minutes, so the flavors can develop. Remove bay leaves before serving. Serve in soup bowls and garnish with a tablespoon of butter on top.

Your white bean soup looks good. i am making my own recipe on Monday 1/9/2012 for my big brother,he is coming to dinner and its a good memory of my Aunt in texas she made it too.. keep cooking... Fantastic! Quick, easy, hearty soup. My entire family loved it. We skipped the whole dollop of butter on top step though, lol. It was still delicious! I made it with fresh greens, exactly as the recipe is written.

This was a great recipe. I used canned collards and vegetable broth and it turned out delicious. I only used one and a half cans of broth for a heartier soup. A couple of drops of Tabasco sauce gave it a great flavor.

Excellent, very tasty. Prepared just as written. Second time through I added basil, oregano and parsley and cut the chicken stock in half to make a heartier soup. Very very good. Thank you for an easy yet tasty meal thats very high in fiber.
