Ingredients Add to grocery list

1 1/2 cup mixed vegetables or niblet corn, prepared
2   8-ounce cans tomato sauce
1   small onion
1 1/2 lb ground meat
1/2 cup sour cream
12 tablespoon butter
1 1/2 cup milk
8-10   medium red new potatoes
2 cup instant biscuit mix, prepared
Salt and Pepper to taste

Directions

Beef Layer:
Saute onions in 2 tablespoons butter.  Add ground beef.  After beef is browned, add tomato sauce; Mix in vegetables.  Add salt and pepper to taste.

Potato Layer:
Peel and slice potatoes 1/4 thick.  Cook in boiling water for approx 15 minutes or until fork-tender.  Whip potatoes with electric mixer; mix until moderately smooth.  Don’t over beat them; a few lumps are nice.  Add 1/2 cup heated milk, 1/2 cup butter, and sour cream.  Salt and pepper to taste.  Whip until mixed.  Adjust thickness by adding more milk, if desired.

Biscuit Layer:
Combine biscuit mix and 1 cup milk. The mix should be thinner than normal biscuit mix but not runny.

Spray a 9x9x2 inch pan, or any similar casserole dish.  Layer half way up with the mashed potatoes.  Next, spread a layer of mixed vegetables or niblet corn on top of potatoes.  Then add a layer of the meat.  Pour biscuit mix over meat.  Melt 4 tablespoons of butter and drizzle over top.  Bake at 350 for approx 35-45 minutes until top is golden brown.

It looks very tasty, but surely it should be renamed as shepherds herd sheep - so it should be made with lamb mince, not beef. In Britain this would be called Cottage Pie - we make both types with mashed potato on top, although a great healthy variation is mashed sweet potato!

This looks delicious Paula, not had chance to make yet as buiscuit topping hard to come by in the Uk. One small point though: I remember watching this recipe on your show following a trip you'd made to England. If that was part of the inspiration for this dish, then it is a 'Cottage Pie' as it uses beef. A Shepherds Pie is called that as it uses ground Lamb. I've not seen many shepherds tending to cows...

I love Shepherd’s Pie. When I made this recipe I had never try Shepherd’s Pie. My mother never made it nor did I ever have anywhere else. What made me try it is that my mother-in-law loves Shepherd’s Pie and well I love my mother-in-law so I decided to try to make it. It was a hit, she loved it, and so did the rest of the family. I now have added my own little twist to make it my own. My family loves it so much that they constantly request this for dinner. Thanks so much Paula! Tinisha

I love this! its very easy and quick to make and i use instant mashed potatos so it cuts the time in half. also for the people asking about the vegtables. I mixed one can with the meat and layered a can of corn on top of the potatos. The first time i made this i just used 1 can of corn mixed in the meat and it was just as good.

Dear Paula...do you have a recipie for sheperds pie without the tomato sauce?My 23 yr old son just had to have emergancy surgery for a ruptured ulcer that he didnt even know he had. The dr told me a few hrs longer he would have died,,he worked with it ruptured for a month...and he loves sheperds pie and i told him i only make your's...so he wants me to make him some. And just so you know i am ur biggest fan..I just love you and i want to meet you so bad...well thank you very much. Hope you and your handsome family have a very Merry CHRISTmas and a Happy New Year. Which is it?? Do you mix in the vegetables as it says under Beef Layer or are the vegetables their own separate layer as it says at the end??
