grated sharp cheddar cheese, for garnish
sprig of dill, optional garnish
crumbled bacon bits, for garnish
1 lb medium shrimp
1/4 teaspoon pepper
1 teaspoon salt
1 cup half-and-half
4 cup milk: whole, reduced fat (2%), or low fat (1%)
2 chicken bouillon cubes, dissolved in 1/2 cup hot milk
2 tablespoon all-purpose flour
8 medium russet potatoes, peeled and cubed
2 medium carrots, diced about the same size as the onion
1 small onion, diced
1/2 stick butter
In a 4-quart saucepan, melt the butter and saute the onion and carrots until both are slightly tender, about 5 minutes. Whisk in the flour and cook for 1 minute. Add the potatoes, milk, and dissolved bouillon cubes. Cook over medium heat for 15 minutes, until the potatoes are very soft and some of them have begun to dissolve into mush. Add the half-and-half, salt, and pepper.
In a small saucepan, bring 2 cups lightly salted water to a boil. Add the shrimp all at once and stir well. Watch the shrimp closely; as soon as they all turn pink, about 2-3 minutes, turn off the heat and drain. The shrimp should be slightly undercooked. When they are cool, peel them, and chop roughly into big chunks. Add the shrimp to the soup and stir well. Serve soup sprinkled with bacon bits and grated cheddar cheese.
Cook’s Note: If you don’t have access to shrimp, use corn.

Paula, I watched you make this and I love Potato Soup and it looked sooo good. The next day I decided to try it, I had never cooked my potatoes in the milk before; I just want to say this was the tastiest,the creamiest potato soup I've ever had. I didn't have shrimp on hand so I made the potato soup with celery, onion, and a little celery seed. Thanks for the recipe, this will be the only way I make it from now on.

Dear Paula; I just love your cooking, I bought taste of homes for years until they changed over to there version now. I use to pour over the books for weeks and now just one look thru and I am done not much in there I would cook. I like good old country stile. I dis like it enought I won't renew my subscription. So now I am stuck on you My sister too she will calll me to get a recipe for her too she watches you all the time too I can't I work I'm single so I cant get out of that one. I get on the computer and look stuff up , make it and take it to work and let the guys eat it,I need to cook but I dont need to eat it all and like I said cooking for one is to much. Fantastic recipe! I have made this for several dinner parties, serving with a salad, and specialty breads. Everyone raves about this and I will be serving this Saturday evening by request for a party of eight. I will double the recipe and guarantee there will be little or no left overs. Tasty recipe! I have been looking for a good potato soup recipe. I'm not a big shrimp fan, so I left that out and added corn. For just a touch of fall I added sweet potatoes too. It ended up being pretty tasty. My husband raved about it. In fact he has loved every recipe I have found on this site. Thanks paula!

This is the best! I have never made it with the shrimp, (and I live on the Mississippi Gulf Coast) but it is so good without the shrimp I always just make it as potato soup. Fabulous, and easy to make. I didn't have any carrots, so I used celery. (I would have put celery in anyway). I used the frozen, cooked shrimp, thawed and drained. This really is delicious. I will definitely be making this again. Thanks, Paula!!
