Potato Casserole

Ingredients:

8 tablespoon (1 stick) butter
1   small bell pepper, sliced thin
1   small onion, sliced thin
Paula Deen House Seasoning (to taste)
1/2 cup sour cream
2 cup mashed potatoes
1 1/2 cup grated Cheddar cheese
4   medium potatoes, cooked
6   slices of bacon, cooked crisp

Directions

Preheat oven to 350 degrees.  Spread mashed potatoes evenly on bottom of casserole dish.  Layer sour cream evenly over top.  (Each time you add a layer, sprinkle on a little House seasoning.)  Saute onion and bell pepper in butter; evenly layer over top of sour cream.  Next, layer with 1/2 cup Cheddar cheese.  Slice potatoes and layer over cheese until top is completely covered with potatoes.  Finally top with remaining 1 cup cheese.  Bake for 25-30 minutes.  Remove from oven and crumble bacon over top.

Leftover mashed potatoes work wonderfully in this recipe.

I made this last night. It's filling that's for sure. It was a bit too much potato in it for me. Too much butter too.Remember there is alredy butter in your mashed potatoe's. The bottom of my casserole dish had a layer of too much butter-so go easy on the butter. I did not keep salting it each layer and I'm so glad I did not. I only salted it once on the sliced potatoes and that was enough! But...hey it's filling and it's one of those dishes that kids will eat up so that's good. It seemed to be lacking something tho.

Good and easy and I modified it with left over mashed, Tater Tots, added garlic instead of green pepper, used a can of Cheddar chse soup and THAT is really good!

I'm confused. Where does the stick of butter go? I used it to drizzle over the potatoes, and the casserole turned out to have WAY too much butter.

I received The Lady & Sons Cookbook for Christmas. I just so happened to catch Paula on the Food Network preparing this recipe. I looked in my cookbook and there it was on page 88. My entire family -as well as myself-loved this recipe.
