vegetable cooking spray
1 1/2 cup all-purpose flour, plus more for dusting
4 eggs
1 (1 pound) box light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cup pecans, chopped
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Spray a 13 by 9-inch pan with vegetable oil cooking spray and dust with flour.
In a medium bowl, beat the eggs with a whisk. Stir in the brown sugar until smooth. Pour into the top of a double boiler. Cook the mixture over simmering water for 20 minutes, stirring constantly, until it reaches 180 degrees F. Let cool for 5 minutes.
Sift the 1 1/2 cups of flour, baking powder, and salt together. Add pecans to flour mixture. Stir into the cooked mixture. Add vanilla and stir until combined. (The batter will be thin.) Pour the batter into the prepared pan and place the pan in the oven. Bake for 25 minutes.
Allow to cool completely in the pan before cutting into pieces. Store in an airtight tin in the refrigerator.

Paula I have to tell you I made the squares for my daughter and she took them to work with her for a snack. When she started to eat one all the other employees came over and wanted to try them. They were a hit. Now when the store has grand opening day at their new location I have been nominated to make them. They were delicious. I love trying your recipes and am never disappointed. I recently bought the Paula Dean Pecan Squares Scented Candle. It smells lovely, and the container is the nicest looking container on the market shelf. I will have to make the eatable pecan squares because my grandson wants to eat what smells so good. Please thank Paula Dean for adding the scented candles to her line of products. Another scent to make (if she doesn't already make one ) is Cinnamon Buns or better still Chocolate Chip Cookies.

I had a taste for something chocolate, so I added a cup of melted Nestle semi-sweet chocolate chips. I also subsitued the pecans for walnuts. It was like a homemade brownie, but it was delicious! I made them for family & friends and they loved them!
