2 cup granulated sugar
1 cup half-and-half
1/3 stick butter
1/8 teaspoon baking soda
1 1/2 cup whole pecans
Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it comes to a boil. Turn heat down to medium-low and continue to stir. Spoon mixture up on sides of pan to melt any sugar that hasn’t melted.
Cook until mixture reaches 238 to 241 degrees F. on a candy thermometer or soft ball stage. Stir in the pecans. Remove from heat. Stir until the mixture begins to thicken and becomes creamy and cloudy. Drop onto parchment paper, buttered pan or buttered marble slab, using a spoon or ice cream scoop. Let cool.

I want the praline candy recipe you han on Paula, tv cooking show. You cooked the sugars. Stirred in pecans and then simlply poured the ingredients in a 9x13 pan to cool then cut out they were perfect..Thanks Cynthia

I am looking for a very (very) easy pecan snack. They are individual, a little salty and very little sweet. they do not cluster, one at a time. Yummy!!!

Good recipe. I made it after looking at many other recipes. I decided to add 1 teaspoon of vanilla and it came out fine. They came out a little grainy but after further reading I found that pralines are best if made when the weather is dry outside. I made them on a very rainy/humid Georgia day. I will definitely try them again.

To the lady who had trouble with this recipe: Make sure you use a heavy saucepan, you can't make pralines on a day that is humid or rainy, and you have to stir them a long time sometimes, and sometimes if you cook them too long, they are grainy. I"ve made pralines for years and sometimes a batch just doens't turn out, but the next one will. My recipe uses buttermilk instead of half and half.

I've used this recipe for pecan pralines three times now. They have turned out perfect each time. I think they taste just as good, if not better, than the pralines you buy at the candy store in Savannah!

The taste was fantastic - I did add a bit more butter but it only enhanced the flavor. One thing to note is that once you have mixed in your pecans, it's game on. You must be ready to transfer the candies to your paper/marble or whatever quickly as the mixture will set quickly. Otherwise, I had not problems - no grain texture, just pure indulgence! - Sharon B.

This recipe was absolutely wonderful! So easy. I made them for a friend of mine who loves pecan pralines and they came out beautiful. They are just like the ones I use to buy her at Savannah's Sweets. Thanks for putting this recipe out there for us. Bonnie

This recipe is very touchy! I followed the instructions to the letter, using a candy thermometer, but the pralines turned out grainy anyway. Also, the pecans became soggy after sitting in the hot syrup. I watched Paula make them on TV & she made it look so simple! I would suggest using a different recipe.
