Crust:
1 cup graham cracker crumbs
1/4 cup sugar
7 tablespoons butter, melted
Filling:
12 ounces cream cheese, softened
1 cup sugar
1/2 teaspoon vanilla extract
3 eggs
Chocolate glaze, for serving, recipe follows
Cherries, for serving
Whipped cream and/or powdered sugar, for serving
Chocolate Glaze:
1/4 cup butter
2 (1-ounce) squares semisweet chocolate
3/4 cup sugar
1/2 cup heavy whipping cream
1/4 cup unsweetened cocoa powder
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Preheat oven to 350 degrees F.
Crust:
In a medium size bowl, combine the graham cracker crumbs with the sugar and butter. Mix well and place in the bottom and sides of an 8-inch springform cake pan. Make sure to press against the sides and bottom of the pan. Place into oven and bake for 8 minutes. Let cool.
Filling:
Prepare the filling by beating cream cheese. Mix in sugar and vanilla while beating until well blended. Add in eggs and combine. Pour mixture into prepared crust. Place on a cookie sheet and bake for 45 minutes. Remove from oven and let cool to room temperature. Refrigerate overnight.
When ready to serve, top with chocolate glaze, cherries, whipped cream and or powdered sugar.
Chocolate Glaze:
In a medium saucepan melt butter over medium-low heat. Add chocolate to the butter. Whisk in sugar, whipping cream, cocoa powder, vanilla, and salt. Whisk until combined. Cook over medium-low heat for 2 minutes while whisking constantly.

Dear Paula, About 50 years ago, my Dad, who worked for a milk producer (ie: similar to one of the larger companies like Sealtest) on the dock where the milk delivery trucks were checked out and then back in at the end of the day, knew a lady who made this absolutely delicious pineapple cheese cake around Christmas time every year. I have never seen one like it since. I think it might have been made with cottage cheese rather than cream cheese since the milk company made thier own butter, ice cream, cottage cheese, buttermilk, etc., but I never saw any cream cheese. So, I wonder if you have this "pineapple" cheesecake recipe anywhere. It had the appearance of cottage cheese and not a smooth texture like the ones we see so much today. This is the easiest Cheesecake recipe ever! It tastes wonderful, is fast and easy to make, and is the perfect size to take to a small dinner party. The first one I made was an 8", which was a little on the flat side, the second I made in a 7" pan for a little more height. Both were wonderful and a big hit. It doesn't need the topping at all.

This was delicious, but it was a very flat cheesecake, maybe an inch tall. I was expecting a big, thick NY style cheesecake...now I realize you need way more than 12 oz of cream cheese! Still great, though! My co-workers loved it! It was so rich that it didn't need the chocolate topping. The butter was dripping out from the crust!
