Oven Fried Chicken

Ingredients Add to grocery list

2 cups Panko bread crumbs
1 cup grated Parmesan
4 tablespoons olive oil, divided
2 tablespoons freshly minced thyme leaves
Kosher salt and freshly ground black pepper
1/4 cup Dijon mustard
2 tablespoons water
2 1/2 pounds boneless skinless chicken breasts, pounded to 1/4 -inch thickness

Directions

Preheat oven to 400 degrees F. Line a baking sheet with heavy-duty aluminum foil. Place a cooling rack over pan and spray rack with nonstick cooking spray.

In a shallow dish, combine bread crumbs, cheese, 2 tablespoons olive oil, thyme, salt and pepper, to taste. In a separate shallow dish, combine mustard, water, salt and pepper, to taste, and remaining olive oil. Coat each chicken breast with mustard mixture; dredge each in bread crumb mixture. Place on prepared rack in pan. Bake for 25 to 30 minutes, or until chicken is golden brown. Serve immediately.

Yesterday on the Dr. Oz show, Paula Deen demonstrated an oven-baked buttermilk chicken recipe. It had been modified to be a low-fat, low-calorie meal. I cannot find the recipe on the Dr. Oz site. Could you give this to me? Thank you.

I followed your recipe almost to the tee. Didn't use thyme. I don't know what went wrong. The panko did not get crispy. I even raised by oven to 425. I would like to know if there is a difference in the Panko's. I use to buy the Japanese brand (very expensive)I am now purchasing 4seasons brand is there a difference? I loved the flavor wish it was crispier.

Okay Paula - You made my snow/ice bound crew happy campers! We had the best gluten free Oven Fried Chicken. Fried chicken has been one of the things we have had to go without, but now we have a new favorite! We just switched the panko with crushed brand name corn square cereal (that is gf!)and the results were incredible! The cereal was just a tad sweet and it really made the mustard and freshly grated parm snap! Even better - it was a breeze to throw together and slap in the oven! Bless you for bringing a little extra happiness to our table tonight!

This is sooooo good!!! I have made it several times, It's quick and easy and it comes out soooo moist. There usually isn't any left over. But when there is it is great for breakfast on a homemade buttermilk bisquit (or Pillsbury Grands Bisquits)

Love this recipe. My kids love it and I have had requests for the recipe every time I make it. Took it to the concert in the park last night and came home with an empty box! I don't pound the chicken, I cut it into pieces and I cook it for 15 minutes on one side and turn it over and cook 10 more. Makes it crispy on both sides.
