Oven-Fried Chicken

Ingredients Add to grocery list

Marinade:
1 cup buttermilk
1/2 cup unflavored yogurt
2 teaspoon spicy brown mustard
2 teaspoon hot sauce
2 teaspoon dried tarragon, 1 tsp chopped, if fresh
2 teaspoon paprika
2 teaspoon salt
1 (2 1/2-pound) chicken, cut into serving pieces or 4 to 6 breast halves
 
Breading:
cooking spray
1/2 cup all-purpose flour
1/2 cup plain oatmeal

Directions

For the marinade:

In a small bowl, mix together the buttermilk, yogurt, mustard, hot sauce, tarragon, paprika, and salt. Put the chicken in a heavy re-sealable plastic bag or a baking pan large enough to hold the pieces in one layer and pour the buttermilk over it. Seal the bag or cover the pan with plastic wrap and marinate in the refrigerator for about 8 hours.

For the breading:

Preheat the oven to 450 degrees F.

Grease a baking pan large enough to hold the chicken pieces in 1 layer.

Place the flour and oatmeal in a brown paper bag. One piece at a time, place the chicken in the bag and shake until coated. Place the pieces skin side down in the prepared baking dish. Continue until all the pieces are covered in the flour mixture. Bake for 40 to 45 minutes, turning once, until the chicken is golden brown.

Love the show.A few weeks back you made pinwheels with mustard herbed cream cheese and bacon.I missed the part of the dough.Is it puff pastry,phillo? Looked for it in your recipes,but no luck.I dont have the name of recipe ti find it.

Found the ingredients for the Dr. Oz recipe on the Dr. Oz website under "In Case You Missed It" y'all! smile It's not complete but gives enough info to go with it. Here's what you do though; marinate the chicken in the next 5 ingredients. Then shake the chicken in the flour. Place on a greased baking sheet and also spray the chicken with cooking spray. There is no temperature but chicken can be cooked anywhere from 350 to 450 easily. 450 would be good for the oven frying. Cooking times will very but start watching the chicken after about 25 mintues. Below I have copied and pasted the measurements from the website: Paula Deen Oven Fried Chicken Recipe Boneless skinned chicken Salt and pepper ½ cup buttermilk 1 ½ tbsp Dijon mustard 2 cloves garlic 1 1/2 tsp hot sauce 1 cup self-rising flour Cooking spray Let chicken marinate 2-8 hours in the refrigerator. Place chicken on baking sheet and cook for 30-50 minutes, depending on size of chicken. I was looking for the Dr. Oz show recipe too. Luckily my husband did write down all the ingredients, but he didn't write down the directions. I assume the method is the same. Boneless skinless chicken salt and pepper 3/4 C buttermilk 1 1/2 Tbsp. Dijon mustard 2 cloves garlic 1 1/2 tsp. Hot sauce 1 C self-rising flour Pam cooking spray If you do not have self-rising flour, just make your own: For each cup of all-purpose flour, add 1 1/4 teaspoons of baking powder and 1/4 teaspoon of salt.
