Ingredients Add to grocery list

1 cup chopped pecans
1 cup evaporated milk
6 tablespoon butter, plus extra for buttering dish
3 tablespoon light corn syrup
4 tablespoon heaping, cocoa
3 cup sugar
1 1/2 teaspoon vanilla

Directions

Mix sugar and cocoa, add syrup and milk. Cook in saucepan over medium heat until small drop forms a soft ball in cold water (234 to 240 degrees on a candy thermometer). Remove from heat. Add butter, pecans and vanilla. Beat w / mixer or by hand. Pour into a slightly buttered oblong glass dish. Dust w/ cocoa and sprinkle with more pecans. Cut into squares. Work fast, as mixture thickens quickly.

THAT IS COOKED ON TOP OF THE STOVE.WHEN I WAS A LITTLE GIRL,MY AUNT USE TO MAKE THIS WONDERFUL CHOCOLATE CAKE AND CHOCOLATE FROSTING THAT WASN'T THICK SHE PUT HOLES IN THE CAKE FIRST,AND THEN POUR FROSTNING OVER IT UNTIL IT DRIZZLED THRU.I DON'T KNOW HOW TO MAKE IT,CAN YOU HELP ME PLEASE!!! seems like this recipe for chocolate fundge,looks easy.my thing is when it boils,that's where i usually mess up at. Maybe this time i can get it right. Thanks ms paula! I'm really a fan of yours.

Hey Y'all, My momma used to make this, God rest her soul, and it is my favorite, BUT there were a couple rules she had to go with the recipe. One, only use a wooden spoon to stir it and two, never make when it is raining or the humidity is too high. Wouldn't turn out right...like one of the people commented on here - grainy and/or gooey. This fudge and a big glass of ice cold milk...oh, it takes me back. Thanks much.

This is my favorite fudge recipe altho I usually put peanut butter in mine. This is my 8 year old grandson's (Eli} favorite fudge also. You are the only chef on tv. that he knows by name, he loves you also. Keep up the good work you and guys are awesome. Thank You, A Fan /Donna Randall

Dear Paula, Hey, I hope you make it to the food festival in Miami again this year. We love having you. My mom used to make fudge and it was much dryer, more solid and firm than the easy type fudge featured in this recipe. I remember she used a double boiler, evaporated milk??? unsweetened chocolate??? very few ingredients. It was the common recipe used by all the ladies back in the 1950s, maybe off of a can of milk? My husband's mother made it the same way. I have never been able to duplicate it and I would really love to. Do you know of a recipe like that from your childhood? Anyway, I love ALL of your stuff. Your Ooey-Gooey cake has made me so fat...I am making every variation. I have a grandson named Jack who just turned six. Isn't being a Granny the best? Lots of Hugs, Suzanne

This is the closest fudge recipe I have found that reminds me of making fudge as a child. We always made it in a cast iron frying pan, and dropped a tiny bit into cold water to test it! I like it when it is a bit grainy, because that's the way I remember it tasting a child!! Leaving out the nuts, though, I like my fudge plain and simple, and super delicious!!!

Very easy to make. If your fudge was grainy you did not boil it long enough causing it to not set up. I have found that if it is humid out I have to boil it a little longer and if it has been real dry out I boil it a little less.

This fudge turned out very grainy and did not harden up. It was still gooy even after being in the fridge overnight. I will not be making this again.

Paula. I just love your show because it is sooo down to earth! You are so fun to watch and your recipes are ones that "norml" people usually eat.
