Michael’s Banana Coffee Muffins

Ingredients Add to grocery list

1/3 cup melted butter
4 ripe bananas, smashed
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 1/2 tablespoons strong coffee
1 teaspoon baking soda
Pinch salt
1 1/2 cups all-purpose flour
1 cup chopped pecans, toasted or raw

Directions

Preheat oven to 350 degrees F.

Grease a 12 cup capacity muffin tin or use paper liners.

With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, coffee and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour, mix until it is just incorporated. Fold in the chopped pecans. Pour mixture into a prepared muffin tin. Bake for 20 to 30 minutes. Cool on a rack.

*Cook’s note: To check to see if the muffins are done; with a toothpick insert into the center of a muffin, if it comes out clean, it’s done.

1 1/2 tablespoons of strong coffee. Do you mean already brewed coffee or the actual ground coffee?

Made these for breakfast today!!! Big HIt. I even cut back the sugar to 2/3 cup and added a pinch of cinnamon. Could not taste the coffee though :(

Dear Paula, I have been home in N.C. a week from my Floria home for six months, leaving Michael's banana coffee muffins receipt in Fl. So, I looked it up on the internet and there it was. I have made this so many times you just wouldn't believe. My husband adores these and so do my friends down the street. They are perfect, not to sweet. I make a butter cream frosting for the tops of the muffins. Just wonderful. These are "the best" muffins ever!!! It is such an easy recipe to make. I make them "mini" cupcake size, and have tried various coffee flavors! When I share them, everyone just "loves, loves, loves" them!! YUM - YUM - YUM!!! from your home, to my home, to many happy "tummys"!! I have made these muffin recipe twice now, my family loves it, even my pickiy daughter that does not like bananas ask for it. I did use whole wheat flour, I just wanted to see how it taste. Couldn't really tell the difference. The first time I left out coffee, daa!, we drank it all. I have made this 1 of my favorite banana recipes. It's a keeper for sure! Thanks Paula & Michael for sharing.
