Ingredients Add to grocery list

2 cup French-fried onion rings
1/2 teaspoon Salt
1/2 teaspoon pepper
1/2 teaspoon garlic salt
1/2 cup sour cream
1   7.6 oz package butter & herbed mashed potato mix
1 cup Monterey Jack cheese
4 cup frozen hash browns
4 ounce cream cheese
1   stick butter
2 cup water

Directions

Preheat oven to 350 degrees. Bring the water to a boil and add the hash browns. Cook for 5 minutes and drain. In a separate bowl, mix potato packets together. Soften the butter and cream cheese together in the microwave. In a large bowl, mix together the mashed potatoes butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Add hash browns. Place in a greased 2-quart casserole dish. Bake for 35-45 minutes. Sprinkle the onion rings over the casserole and bake for about 5-8 minutes longer until onions are golden brown.

I will rate this again once I have made it the way Paula made it on the show. I had already made this and thought something didn't seem right with the preparation. After watching the video, this recipe needs more clarification and so does Libbie Summers, Senior Food Editor for Paula Deen in her response to the confusion regarding the mashed potatoes. I'm not sure about how many packets of the mashed potatoes to use, but with the amount of water used, I would only think one. In the video, Paula did not prepare them first. She put them dry into the bowl, added the rest of the ingredients listed, then the hash brown potatoes, then 2 cups of boiling water, stir. I hope this helps with the confusion surrounding this recipe. I needed some serious clarification myself.

I had MAJOR issues with this!! The whole "Instant Potato" thing for one and then the potatos were not creamy at all. Not enough directions and I cook ALL the time.

Recipe said to mix potato packets together. Only saw one potato packet in recipe. Do you make the instant potatoes first or do you just add the powder to the dish.

I made these in the crock-pot and they did great! I sprayed the inside of the crock with Pam and cooked them on high (since they're so dense) for three hours, stirring every once in a while. I simply browned the french fried onions in the toaster oven and put them on top right before I rang the dinner bell. I added about a cup and a half of hot milk to make them a little creamier. Sometimes I use the sour cream and chive instant potatoes which are equally as good. I've also added chopped cooked bacon, cheddar cheese, sour cream and even bleu cheese and everybody loves them every time I make them.......which is pretty much all the time!
