Low Country Cookies Low Country Cookies Recipe Courtesy of

Ingredients Add to grocery list

1 cup chopped pecans
1/2 cup milk
1   egg
1 cup sugar
12 tablespoon (1 1/2 sticks) butter
1   16-ounce box graham crackers
1 cup or 3 (1/2-ounce) cans shredded coconut

Topping:
2 cups powdered sugar
1 teaspoon vanilla
4 tablespoons (1/2 stick) butter
3 tablespoons milk

Directions

Line a 13 x 9-inch pan with whole graham crackers.  Melt butter in saucepan and add sugar.  Beat egg and milk together; add to butter mixture.  Bring to a boil, stirring constantly.  Remove from heat.  Add nuts, coconut, and 1 cup graham cracker crumbs.  Pour over crackers in pan. Cover with another layer of whole graham crackers. Prepare topping.

Topping:

Beat all ingredients together and spread over top layer of crackers. Chill. Cut into squares.

Ok...so with all this talk about these tasting like German Chocolate Cake, I decided to add 1 1/2 T. cocoa powder to icing and all I can say is "O BABY!" I've been baking since Dec. 1st and have many fans. My friends keep asking, "What's next?" Thanks for the great recipes!

The Low Country Cookie recipe sounds wonderful and am planning to make them tomorrow!! Questions: 1. How long do you chill the cookies for? 2. Do you have to put what's left back in the icebox to keep them chilled, or will they stay set in a cookie jar?

I made these for my ladies SS class today. They loved them! The filling really does taste like the filling in German Chocolate Cake. Next time, I will probably cut the topping recipe in half. I had enough to completely cover, and it seemed a bit too much. Thanks for this recipe!!!

When you were making the Low Country Cookies, I wanted to make them right-a-way. but didn't have all the ingredients. I'm making them tonight June 21, 2011 and I hoping they will turn out as good as they look. My husband doesn't like coconut, with the exception of German Chocolate Cake. I'm also hve high cholestrol and high blood sugar. And we are both trying to loose weight. I know this receipe might not help, but I must try these, even if it's only once. Do you have some receipes for a weight watcher, cholestrol and blood sugar problems. I love your show and need some tips. Bonnie

I really like this receipe, The taste was good, and very easy. The only thing how long do you cook the filling there is no time listed for how long to cook. Other than that this is going to be one of my favorites to put on my Christmas Plates that I give away every year.
