Crust
2 cups all-purpose flour
1 cup confectioners’ sugar, plus more for dusting
pinch of salt
2 sticks butter, at room temperature, plus more for greasing
Filling
4 eggs
2 cups granulated sugar
6 tablespoons all-purpose flour
6 tablespoons fresh lemon juice
Preheat the oven to 350 degrees. Lightly grease 9x13x2-inch pan.
Make the crust by combining flour, confectioners’ sugar, and salt in a large bowl. Cut in the butter to make a crumbly mixture. Press the mixture into the prepared pan. You may need to dip your fingers into a little flour or confectioners’ sugar to keep the dough from sticking to your fingers. Bake for 15-20 minutes.
Meanwhile, to make the filling, mix the eggs, granulated sugar, flour, and lemon juice. Pour this over the baked crust and bake for 25 minutes longer. Sprinkle with confectioners’ sugar, if desired, when the bars are done.

My neighbor gave me some lemons, so I decided to try your lemon bar recipe. It came out really great. Thankyou for your delicious recipe. I'll get one of your recipe books when I'm back working. I got laid off, so moneys a little tight. I hope you don't mind if I use your recipes online.

I just made these and they are delish! I doubled the lemon filling recipe because I wanted a different filling:crust ratio, and I didn't even have to add any additional cooking time. I also added lemon zest to the crust.

Thanks Paula, It's 11:30 at night, and I decided that I had to have lemon bars to go with the sweet marie bars (you would like those) for a post funeral service in my home tomorrow. Until about 3 hours ago, I didn't know that I was going to be hosting this get together! I have vacuumed, dusted, and windexed the shiny bits in the bathroom and kitchen, and thought that I had better get baking. I love, love, love anything with lemon...if it's a dessert of course! Would love to see you and am hoping to take a trip down your way and eat in your place...it's a bit of a drive though since I'm in Ontario, Canada and have SPMS so I can't sit long in the car.
