Recipe Courtesy of Paula DeenServings: 1 three-layer cake

Cook Time: 25 min
Difficulty: Easy
Cake:
Basic 1-2-3-4 Cake recipe, but substitute 1 cup canned, unsweetened coconut milk for regular milk
Filling:
3/4 cup sugar
1 cup sour cream
4 tablespoons milk
1/2 cup flaked, sweetened coconut
Frosting:
7 Minute Frosting recipe
Flaked, sweetened coconut for sprinkling
Follow directions for Basic 1-2-3-4 Cake, substituting coconut milk for regular milk. While cake is baking, prepare filling. Stir together sugar, sour cream, milk and coconut in a bowl until well blended. Remove cake layers from oven and allow cake to remain in pan as you prepare to stack and fill. Remove first layer and invert onto cake plate. Using the wrong end of a wooden spoon, poke holes approximately 1 inch apart until entire cake has been poked. Spread one third of filling mixture on cake layer. Top with second layer, repeat process. Top with last layer and repeat process again. (As I stack layers together, I stick them with toothpicks to prevent cake from shifting.) You can place the cake in the refrigerator for 3 days to allow it to absorb the filling mixture.
Prepare 7-Minute Frosting. Frost top and sides of cake. Sprinkle top and sides of cake with additional coconut.

my sister-in-law having her first baby!! so exciting!! She loves coconut. I want to make a beautiful, elegant cake of coconut / key lime/ chocolate my inspiration came from those decadant coconut key lime squares you can purchase in key west, FL. I was thinking 3 layer coconut cake with 2 layers vanilla key lime pudding and one ganache, frosted and top of cake dusted with coconut and chocolate shavings? not sure about outside of cake - any suggestions for a cake like this?? best regards you are a wonderfully inspiring chef!!

Ms. Paula, I am a newly wed and have been learning how to cook my husband's native lebanese cuisine. I'm sure you know that it is a cuisine that tastes fabulous, but can be very difficult and time consuming to make. I am always trying to impress his family with my new but talented cooking skills, and maybe always falling a little bit short of their expectations. However, I made this coconut cake for the family Christmas party and it was a SENSATION! Hi Paula, I have been watching your programme on the TV here in South Africa and when I saw you making the Coconut Cake with Elmo I decided that I had to try it. I have found the recipe for the 1 2 3 cake and the reciipe of the Coconut Cake aswell. I hope to have a go over the weekend and then show it off to family and friends. A family favorite. I have made this cake at least 3 times & it is fabulous. The addition of the coconut milk gives a boost to the overall flavor & adds to the moistness of the cake. Definitely worth a try!
