Recipe Courtesy of Paula DeenHearty and heart warming this traditional Italian soup is sure to please.
Servings: 6 to 8 servings

Cook Time: 45 min

2 tablespoon olive oil
4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 3/4 pound)
1 small onion, chopped
1 cup sliced carrots (about 3 small)
2 1/2 cup sliced zucchini (about 2 medium)
2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
2 (14.5-ounce) cans chicken broth
Grated Parmesan, optional
In a large Dutch oven, heat olive oil over medium-high heat. Add chicken, and cook for 10 minutes, stirring frequently. Add onion and carrot, and cook for 5 minutes. Stir in zucchini, diced tomatoes, and chicken broth. Bring to a boil; reduce heat, and simmer, uncovered, for 30 minutes. Top each serving with grated Parmesan cheese, if desired.

Paula, I love to eat your recipes but I will not do to the fact you don't post the calories, fat and other important information on your food. I have to be honest that I live in the Midwest and I know the south is know for there increased butter and sugar usage in your foods. So until I see food facts I can't risk my waste line over your inceased usage of butter and sugar.

We just tried this recipe tonight for the first time. I followed the recipe for the most part, this is what I done different. I cooked my chicken in the olive oil and rinsed in in hot water to get all of it I could off. Then I added the olive oil the recipe called for to the soup along with a little extra carrots (which I love when they are cooked or raw with ranch)& some extra chicken. It was perfect! My whole family, including a picky 3 year old and a non-veggie eating 7 year old! I grated some fresh parmesan over everybodys bowl & served it with bread and celery and ranch! IT WAS GREAT!

My husband is recovering from chemotherapy and needs organic vegetables - which I used along with some organic cabbage I steamed on the side and threw in at the end. Also, I used plain salt-free diced tomatoes and added my own garlic, basil and oragano to taste. It was very healthy and healing for him. Thank you, Paula.

i read reviews come on here and complain about the recipes this recipes is too bland or that is to dry it doesn't taste that good. everyone,s taste is different. has any of these people ever heard of tweaking the recipe to their liking. Paula Deen is a good cook cause she cooks to her liking. she tweaks this seasoning and tweaks the cooking time time till she is satisfied with how it taste. so you people who come on here to complain try tweaking before you write
