Italian Chicken and Vegetable Soup

Hearty and heart warming this traditional Italian soup is sure to please.

Ingredients:

2 tablespoon olive oil
4   boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 3/4 pound)
1   small onion, chopped
1 cup sliced carrots (about 3 small)
2 1/2 cup sliced zucchini (about 2 medium)
2   (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
2   (14.5-ounce) cans chicken broth
Grated Parmesan, optional

Directions

In a large Dutch oven, heat olive oil over medium-high heat. Add chicken, and cook for 10 minutes, stirring frequently. Add onion and carrot, and cook for 5 minutes. Stir in zucchini, diced tomatoes, and chicken broth. Bring to a boil; reduce heat, and simmer, uncovered, for 30 minutes. Top each serving with grated Parmesan cheese, if desired.

We love this soup. It is very nutritious and satisfying. I modified it slightly by adding 2 1/2 cup of sliced squash (about 2 medium).

I made this recipe and didn't use the carrots (I'm on South Beach). I added a dash of white wine towards the end of the onions 'browning'... it tasted amazing!! I did chop the Zucchini with a chopper... so they are a little fine but it didn't make a difference! GREAT!

My family loves this soup, and I've shared it a bunch lately. Over the course of the last 8 days, my former Sunday School teacher, the mothers of two friends, the father of another friend, and my husband's boss all passed away. I have taken a pot of this soup to each family. Now five more families love this soup.

I made this recipe for my husband and my three year old child. We all loved it. My son even cried when we told him there was no more! I passed it on to my mother who said that everyone who tried it loved it as well. Excellent recipe :)

This soup is outstanding and easy to make. I took the advise of a reader below, cooked cheese tortellini in another pot, ladeled the soup over the tortellini with grated parmesan...YUM!!!

I loved this soup. I didn't have the exact vegetables, so I used mushrooms, carrots, cauliflower, and red peppers. My picky daughter even liked this one.

This is great easy recipe that can be made at the last minute! It is easily doubled and can serve a crowd quickly. I added cheese tortellini it does not get any better!

I absolutely LOVE this dish. I left out the Zuccini because my children aren't too big a fan of it. And it still tastes AMAZING. And after I'm done it's an easy leftover for later,(that's if its not all gone the first time around,) I just pop it in a Tupperware dish, and into the fridge it goes. I've taken this dish to countless potlucks because I get requests for it all the time. You gotta be fast when you set this on a table, because before long, it'll be gone.

I did not use the 2(14.5-ounce) cans diced tomatoes with basil, garlic, and oregano...cause my BF don't like tomatoes. But it is so good.
