Ingredients:

1   3.4-ounce box French vanilla pudding, plus ingredients to prepare
1 1/3 cup sugar
1   20-ounce can crushed pineapple
1   18.25-ounce box yellow cake mix, plus ingredients to prepare
1 1/2 cup heavy cream
1 cup flaked, sweetened toasted coconut

Directions

Preheat oven to 350 degrees.

Prepare yellow cake mix as directed using a greased 13x9x2-inch pan and bake for 30 to 35 minutes.  While cake is baking, combine the pineapple, 1 cup of sugar in a saucepan,  and bring to a boil over medium heat stirring constantly.  Remove from heat and allow to cool slightly.

Remove cake from oven and using a fork, pierce holes into cake.  Pour pineapple mixture over hot cake and set aside.

Prepare pudding according to package directions.  Spread pudding over cake and refrigerate until thoroughly chilled.  Whip heavy cream and remaining sugar until stiff.  Cover top of cake with whipped cream and sprinkle toasted coconut on top.

I have a question,I made this cake tonight & plan on serving it tomorrow for Easter. It didn't say to drain the pineapple juice - does anyone know if you are suppose to drain or not? I guess I will see how it turned out tomorrow.

So glad I finally found this recipe, I made this cake several years ago when the recipe was in Woman's World, took it to a church function and it was the rave. I lost the recipe never thought about finding it online. It is delicious, so excited I have the recipe once again.

I made this cake for the first on Thanksgiving. And boy did I out do myself! This has to be the best cake I ever made. Plus, I got great feedback from my famliy and friends. It was nice, easy and fun to make. However, I will admit that it was a bit sweet great but for my sweet lovers family it was just RIGHT!! Iris

a lil twist that is simillar to this cake is use a white cake ,use three 8 inch rounds bake and cool then do your layers all the same pudding crushed pineapple coconut ,then cool whip all over the cake and cover with coconut this way you can do it with out cooking and this is to dye for thats what our family calls it. angelina smith from omaha nebraska

What i like to add to it as well is sliced banannas that were soaked in lemon juice. Got that idea from another person who had made this.
