This tastes so good, you won’t believe how quick and easy it is to make.

Servings: 4-6 servings
Prep Time: 5 min
Cook Time: 45 min
Difficulty: Easy

Ingredients Add to grocery list

1 1/2 cup instant biscuit mix
1 cup milk
1   stick melted butter
1   (10 3/4-ounce) can cream of chicken soup
Salt and pepper, optional
1/2 cup frozen green peas
1/2 cup thinly sliced carrots
2   hard-boiled eggs, sliced
2 cup chopped cooked chicken breast
1 cup chicken broth

Directions

Preheat oven to 350 degrees F.

In a greased 2-quart casserole, layer the chicken, eggs, carrots, and peas. Mix the soup, chicken broth, and season with salt and pepper, if desired. Pour over the layers. Stir together the biscuit mix and milk, and pour this over the casserole. Drizzle butter over the topping. Bake until the topping is golden brown, 30 to 40 minutes.

I loved this recipe the first time I made it. The second time, I did back off on the butter to 1/2" stick and loved it anymore. (I use Pioneer Brand buttermilk biscuit and baking mix)

This recipe sounded sooo good....I measured carefully, checked the oven temp, followed directions exactly and got soup instead of pot pie! It was very watery. Anyone have any ideas? It still tasted good, but I wanted potpie, not soup. thanks!

What do you recommend for the instant biscuit mix? I used Bisquick and it didn't turn out so good. The butter just sat on top and the topping took forever to brown. Suggestions on the mix?

I've been looking for an easy chicken pot pie recipe, and this is it!!! So good, and so easy to make! I used shredded rotisserie chicken and canned mixed vegetables. I did cut the amount of melted butter in half, but I think I'll try the whole stick next time. It required a full hour in the oven to get it the perfect golden brown. This will DEFINITELY become part of my regular repertoire!

I've been making this for over 25 years and it's always been a quick favorite for using up that leftover Sunday chicken or turkey! A lot of young Marines ate this at my house when my husband was still active duty, and bringing home his men for a home cooked meal.

OMG, this pot pie recipe was amazing!! im not much of a cook and so when i took on preparing one of Mrs. Paula's recipes, lets just say i wasnt expecting much from myself lol IT WAS DELICIOUS!!!! and soo easy to make!
