Grits Pie

Ingredients Add to grocery list

1/4 cup buttermilk
3   large eggs, slightly beaten
2 tablespoon all-purpose flour
3/4 cup sugar
1/2 cup (1 stick) butter
1/4 cup quick-cooking grits
1/8 teaspoon salt
3/4 cup water
1 teaspoon vanilla extract
1   (9-inch) frozen pie shell, thawed and unbaked
Sweetened whipped cream and strawberries (optional)

Directions

Preheat oven to 325 degrees.  In a small saucepan, bring water and salt to a boil.  Add grits and cook for 4 minutes, stirring constantly.  Add butter and cook for an additional minute.  Set aside and cool slightly.

In a small bowl, stir together sugar, flour eggs, buttermilk and vanilla.  Stir into cooked grits.  Pour into pie shell and bake for 35-40 minutes, or until set.  Serve warm or cold with whipped cream and strawberries as a garnish, if desired.

I also saw this on her show. I have many it a few times. I have used fresh lemon juice, fresh orange juice, and fresh pinaplle juice in place of the vanilla. The best was the one with lemon. I also put some zest in. My family loves this pie so much that I now make it for Thanksgiving.

My wife saw this on your show and told me about it. We looked it up and tried it. Now, my wife doesn't eat grits, but she loved this and so do I and everyone else that has tried it. I'm introducing it to a small group tomorrow night and expect similar results.

I stumbled across this recipe while I was in the hospital. I wasn't allowed to eat and the only channel I could get to come in was the cooking channel...the horror. tongue laugh I can't wait to try it. It looked wonderful.
