Cook Time: 35-40 minutes

1/4 cup buttermilk
3 large eggs, slightly beaten
2 tablespoon all-purpose flour
3/4 cup sugar
1/2 cup (1 stick) butter
1/4 cup quick-cooking grits
1/8 teaspoon salt
3/4 cup water
1 teaspoon vanilla extract
1 (9-inch) frozen pie shell, thawed and unbaked
Sweetened whipped cream and strawberries (optional)
Preheat oven to 325 degrees. In a small saucepan, bring water and salt to a boil. Add grits and cook for 4 minutes, stirring constantly. Add butter and cook for an additional minute. Set aside and cool slightly.
In a small bowl, stir together sugar, flour eggs, buttermilk and vanilla. Stir into cooked grits. Pour into pie shell and bake for 35-40 minutes, or until set. Serve warm or cold with whipped cream and strawberries as a garnish, if desired.

I also saw this on her show. I have many it a few times. I have used fresh lemon juice, fresh orange juice, and fresh pinaplle juice in place of the vanilla. The best was the one with lemon. I also put some zest in. My family loves this pie so much that I now make it for Thanksgiving.

I stumbled across this recipe while I was in the hospital. I wasn't allowed to eat and the only channel I could get to come in was the cooking channel...the horror.
