Grandmother Paul’s Red Velvet Cake

Ingredients:

1 teaspoon vanilla
1 cup buttermilk
1 teaspoon salt
2 1/2 cup cake flour
1/2 lb (2 sticks) butter
2 ounces red food coloring
2 tablespoons cocoa
2 cups sugar
2   eggs
1/2 teaspoon baking soda
1 tablespoon vinegar

Icing:
1 16-ounce box of confectioner’s sugar
1 stick butter, softened
1 cup melted marshmallows
1 cup shredded coconut
1 cup chopped pecans
1 8-ounce package of cream cheese

Directions

Preheat oven to 350 degrees. Beat eggs; add sugar.  Mix cocoa and food coloring.  Add butter and egg mixture; mix well.  Sift together flour and salt.  Add to creamed mixture alternately with buttermilk.  Blend in vanilla.  In a small bowl, combine soda and vinegar and add to mixture.  Pour into three 8-inch round greased and floured pans.  Bake for 20 to 25 minutes, or until tests done.

Icing:

Blend cream cheese and butter. Add marshmallows and sugar and blend.  Fold in coconut and nuts.  Spread between layers and on top and sides of cooled cake.

This is absolutly the best Red cake ever. I have been making it for years exactly the same recipe for the cake, a different frosting. You will never go wrong with this cake for every occasion. This was the cake for my son's wedding rehersal dinner. Thanks you for sharing your grandmothers red velvet cake

The Red Velvet Cake recipe that I use is similar except you mix(1tsp) soda & hot water (1T) together and add to the mix. Instead of 2 sticks of butter in the cake mixture there is 2 sticks of butter in the icing. Icing~ 5T flour 1 cup milk 1 cup sugar 2 sticks butter 1 tsp vanilla Cook flour and milk over medium heat until thick stirring constantly. Cover & cool. Cream butter & sugar til light & fluffy. add vanilla. Stir milk mixture into creamed ingred.and blend well. Do not overbeat or it will be thick & stiff! Should be like whipped cream! Made two of these cakes for Christmas and everyone LOVED it. I made on with Coconut and Pecans and the other without since a relative has a nut allergy. Both were great. I will make this again. Thank you.

I just made this cake for Christmas. IT WAS DELICIOUS. Red Velvet is suppose to be a dense cake, but the cake was very moist. The frosting was a tad bit too sweet, but I think I will cut down on the marshmellows next time, and omit the coconuts. Thank you Paula. Every recipe I have made from your site has been a HIT!!!!

I baked this cake for Thanksgiving and will do so again at Christmas. WHAT A TREAT! This is go delicious. For a less sweetness omit the coconut and it well still be great.

Grandmother Paul's Red Velvet Cake is a dense cake,making sure to sift your cake flour is important for a lighter cake as well as creaming the butter and sugar very well...all helping to make the cake lighter in texture. We love this cake and wouldn't change it for anything, so please try it again! This time try a simple cream cheese icing. A much less sweet outcome and equally tasty. I am a pretty good baker and have been for 20+ years. I decided to make this recipe for my mothers birthday on 12/14 since it was part of my Christmas theme. What a mistake! I spent over 3 hours baking and decorating it, and it looked beautiful, but the cake was so dense not one person out of 8 finished their piece. It was so heavy and so sweet. After all that effort we wound up throwing out the rest of the cake. What a shame I do not recommend making this recipe.
