Recipe Courtesy of Paula DeenServings: 8 quarts
Prep Time: 10 min
Cook Time: 1 hour
Difficulty: Easy
1 cup butter
2 cup packed brown sugar
1 teaspoon salt
1/2 cup light corn syrup
1 teaspoon baking soda
Over medium heat, combine first four ingredients and boil for 5 minutes. Remove from heat; stir in baking soda. Stir well. Pour over 8 quarts popped corn. Stir to coat well. Bake in large roaster or pan at 200 degrees for 1 hour, stirring every 15 minutes. Spread on waxed paper to dry.

On the TV show, you showed adding nuts to the caramel corn. None shown on the above recipe. Are the nuts you added on TV raw or already cooked? Thank you for your anticipated response. Judy

I do it too but I put instead of the 1/2 cup corn syrup a 1/2 cup honey and 1 teaspoon of vanilla extract to the other ingredients.and i bake it at 120 degrees for 1 hour.

When you are boiling the mixture for 5 minutes, do you need to stir it, or just let it boil?

I was excited to find this recipe! I made a couple large batches and gave the caramel corn as Christmas gifts. The first time I made it, I used the recipe as directed, and it was incredible! The next time, I added a tsp. of Vanilla Extract and an additional 1/2 tsp. of sea salt. It gave it an extra pop of richness with an amazing sweet/salty combo. I love this recipe!

Paula, Thank you, thank you, thank you! I had lost my recipe that I've used for years & years & was in a panic (everyone's been asking for caramel corn). This is my exact recipe! I was SO grateful when I found it yesterday! I've always used 3 bags of microwave popcorn & it's just the right amount of corn. Also, do NOT double it, unless you have a huge oven & huge roaster pan. I've found it's best to just make single batches (although I have to make multiples because it's eaten so quickly).

WOW - very good! I made in half batches, because I didn't have a big enough roaster pan. This is very easy to make. Giving as Christmas gifts, if it lasts that long. Variation: I also melted chocolate chips, and drizzled on the cooling caramel corn. Excellent also.
