Cake:
1 18.25-ounce box yellow cake mix
1 egg
1 stick butter, melted
Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon pure vanilla extract
1 16-ounce box confectioners’ sugar
1 stick butter, melted
1 cup almond toffee bits or chocolate toffee bits
Preheat oven to 350. Lightly grease a 13x9x2-inch baking pan.
In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside.
Still using an electric mixer, beat cream cheese until smooth; add eggs, butter and vanilla. Dump in confectioners’ sugar and beat well. Reduce speed of mixer and slowly pour in butter. Mix well. Fold in toffee bits.
Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Don’t be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don’t bake it past that point!
Remove from oven and allow to cool completely. Cut into squares. Just remember that these wonderful cakes are very, very rich, and a little will go a long way.

I made these for a family function and they turned out relatively well, and were pretty good. They weren't "like crack" like some of the other reviews insinuated, and I don't know if I would make them again. I did appreciate how moist and flavorful they were, but they were extraordinary like some of the other recipes Paula has like her heavenly red velvet.

Any one else notice that for the filling, it lists a stick of butter, but down in the directions, it doesn't tell you when to add it? I just about forgot to add it because I was reading as I went. Might want to update the recipe. Thanks, Ashley

i have just seen gooey butter cake on TV here in the UK. it looks fantastic but every recipe i have found uses a cake mix. I am guessing that this is a packet cake mix. I never use this short cut as i prefer to bake my own. is i were to make this what texture should the cake be - is it a pastry texture or a sponge mixture. also how much does a stick of butter weigh. we have butter pats which are 8ounces 200gms

You and Bobby made the gooey butter cake a few weeks back on your show. I taped the show to make sure I got the recipe right. You said to bake it 30 to 40 min. and do not over bake. I made it for Easter. After 40 min. I took it out and the center was still a bit giggily! And now I see itr says here 40 to 50 min. I will bake it a bit longer next time. FYI....I have your red and black speckeled square non-stick skillet and love it. Does it have a lid? Also, the round metal measuring cups you use on your show....do you cell those???? My son's elementary school was having a bake-off contest. No one would volunteer to bake anything so I finally agreed to bake something and had heard rave reviews of Paula's Gooey Butter Cakes (but never tasted one). This cake isn't that much to look at and really didn't measure up against the other "pretty" cakes. To my surprise I won first place. I guess looks don't always matter. Everyone raved about how good the Toffee cake tasted. Thanks Paula. My son's class thinks I am the bomb!

I made the pumpkin gooey cake for Thanksgiving. Instead of the yellow cake mix,I used the spice cake mix. Got alot of raves. Love to watch Paula make her recipes
