Recipe Courtesy of Paula DeenServings: 6 to 8 servings
Cook Time: 1 hour
Difficulty: Easy
4 tablespoons (1/2 stick) butter, melted
2 eggs, beaten
1 tablespoon all-purpose flour
3/4 cup sugar
1 (3 1/2–ounce) can shredded sweetened coconut (about 1 cup)
1 cup milk
1 (9-inch) unbaked pie shell
Preheat oven to 350 degrees F.
In a large bowl, combine melted butter, eggs, flour, sugar, coconut, and milk. Pour into pie shell. Bake until firm, about 45 to 60 minutes.

AWESOME! I added a little coconut flavoring to the pie and it was DELISH! No to mention very easy to make! I covered the edges of the pie for the first 45 minutes or so to keep fromt he edges burning! And it takes closer to 60 minutes than 45 in my oven!

My husband and I really love this pie! It's so easy to make and has a custard taste to it, which we both really enjoyed while it was warm. I made two, so I may keep one in the refrigerator and one on the counter, and then rate the taste of each one. What fun! Be careful, though, to cover the edges of the crust with aluminum foil after about 20 minutes, to keep it from browning too much.

At last! A custard pie that does not weep and make the crust soggy. Very easy to prepare and so delicious. This will be a regular dessert "go to" dessert in my collection.

FINALLY! A custard pie that does not weep and become watery making the crust soggy. I have kept it in the refrigerator for up to 3 days and the quality and and flavor remains consistent. Love this recipe. So easy and it tastes delicious. This recipe has a permanent spot in my recipe file and is one I will make often.
