Recipe Courtesy of Paula DeenServings: 15 rolls
Prep Time: 1 hour 15 min
Cook Time: 15 min
Difficulty: Easy
1 tablespoon sugar
1/4 cup (1/2 stick) melted butter
2 1/2 cup plus 1/2 - 1 cup Lady & Sons Biscuit Mix or any prepared biscuit mix
3/4 cup warm water (98-105 degrees)
1 1/4-ounce package active dry yeast
Preheat oven to 400 degrees. Dissolve the yeast in the water. Put the 2 1/2 cups of biscuit mix in a large bowl; stir in the sugar. Add the yeast mixture, stirring vigorously. Sprinkle the work surface generously with the remaining 1/2 to 1 cup biscuit mix.
Turn the dough out onto the surface and knead well, 15 to 20 times. Shape the dough as desired. (I shape heaping tablespoons of dough into balls). Place on a lightly greased baking sheet, cover with a damp cloth, and let rise in a warm place for 1 hour.
Just before putting into oven, brush rolls with melted butter. Bake for 12 to 15 minutes, or until golden brown. Brush the rolls again with melted butter while they’re hot.

What she means by the extra mixture...is to use it while rolling out the dough and kneading it...sometimes you may need that much and again you may not...you will be able to tell as you go along. It should be some sticky. NOW If you want more of a rolled biscuit, then use some of the extra flour and roll out to your thickness and put the whole batch on the pan, letting it rise according to directions...and then mark it with a knife...that works great also!!! Then you get ALL of the Goodies of the biscuits. I have done both ways. Depends whether I have the time to do one by one.

I keep reading comments about the biscuit flour measurements. If you read the directions 2 1/2 cups of biscuit mix goes in the recipe, the remaining 1/2-1 cup of mix is used to "dust" your work surface. You know so the mixture won't stick.... I thought Paula's directions were easy and right to the point. I guess the old say is true, it's hard for some people to read and follow directions...lol. So far Paula I love each and every recipe I've tried with the exception of the crock pot mac and cheese. I'm use to my mother's homemade mac and cheese and this recipe didn't compare to hers. I love trying new things and have enjoyed my time in the kitchen. As a male my mother always told me at a young age I needed to know how to cook and she spent time with me in the kitchen teaching me. Now that my parents are older I do some cooking for them so the time my mother spent in the kitchen with me is now paying off. Tonight I'm preparing the old fashioned meatloaf, the easy yeast rolls, fresh potatoes from our garden, and banana split cake. So far I've purchased your first two cookbooks and the cooking Bible, hopefully one day I'll be able to collect all of your cookbooks and keep smiles on my family and friend's faces with the food I cook. Thank you for your dedication to the joy of cooking. Johnny

PAUla I watch your show everyday and I love it when you haveJamie,Bobby, and Micheal on the show with you. I lost my husband eleven years ago, He liked to be in the kitchen with me, when we would have all the family to our house for dinner. He was my taster he would say, that if he liked what ever I was fxing,I had better make extra so he could have a snack later after eveyone went home. I cooked alot of your dishes for him and he always wanted extra to take for lunch. Now I live in a small apartment and do not cook much any more, But I still love to watch the show.So keep cooken

Saw your segment this morning showing your pear halves salad and reminded me of my grandmother's rendition of that recipe. We helped her can many jars of pears from our neighbor/cousin's pear orchard way back in the 1950's. In the wintertime, when fresh fruit was not in season, she'd open a jar of those pear halves and put each half on a leaf of fresh lettuce. In the hollow of each pear, she'd put about 1 scant teaspoon of mayonnaise, shred a little cheddar cheese and sprinkle a few raisins on top. When the cupboard was bear, she could always rustle up a meal and even could come up with a salad from the pantry! What memories you've brought to my mind today! Many thanks. Could these work as an herb roll? Wondering if by adding some basil, parsley, and chives if they would turn out good? Would I need to add anything extra if I were to add the herbs?
