1 small onion, diced
2 large pimentos, diced
3 tablespoon butter
3 tablespoon all-purpose flour
1 1/2 cup chicken stock
1 1/2 cup cream
3/4 cup grated sharp cheddar cheese
1/2 cup green onions
Salt and black pepper, to taste
dash of cayenne pepper (optional)
In a saucepan, saute onion and pimentos in butter for 5 to 7 minutes. Blend in flour. Add stock and cream. Cook until thick. Add cheese and stir until melted. Add 1/4 cup green onions, salt and pepper to taste, and cayenne if desired. Garnish with remaining green onions.
Serve with your favorite bread or croutons.

Dear Paula I was looking for your recipe that was in your Septemeber issue on line I could not find it . It was broccoli cheese soup made with sweet potatoes and russet potatoes and I can't find it would you be so kind as to share it with me on your own time of course I really want to try it out it sounded so good not so much cheese and no flour for the base Thank you Barbara Davis

This is absolutely amazing. I paired it with some crusty french bread and an iceberg wedge salad (also by Paula Deen) and my husband couldn't stop complimenting it. I love this soup! Love it!

I made this soup tonight and it was restaurant quality and aside from prepping the vegetables it maybe took me 20 minutes to finish. I put it with some nice crusty french bread and an iceberg wedge salad with blue cheese (also from Ms Paula Deen) and my husband and I were in Heaven for dinner. I recommend this dish to anyone!

Yummy! I used butter flavor cooking spray, low-fat sharp cheddar cheese, and fat free cream to reduce the fat content. Off the hook!

Quick and easy to make. I'm a cheese lover and shred a 4 ounce block of cheese and add it all to the soup. I also add bacon pieces with the green onion. It's delicious!
