Servings: 4 to 6 servings

Difficulty: Easy
1 pound crabmeat, picked free of shells
1/3 cup crushed crackers (recommended: Ritz)
3 green onions (green and white parts), finely chopped
1/2 cup finely chopped bell pepper
1/4 cup mayonnaise
1 egg
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1/2 lemon, juiced
1/4 teaspoon garlic powder
1 teaspoon salt
Dash cayenne pepper
Flour, for dusting
1/2 cup peanut oil
Favorite dipping sauce, for serving
In a large bowl, mix together all ingredients, except for the flour and peanut oil. Shape into patties and dust with flour.
Heat oil in a large skillet over medium heat. When oil is hot, carefully place crab cakes, in batches, in pan and fry until browned, about 4 to 5 minutes. Carefully flip crab cakes and fry on other side until golden brown, about 4 minutes. Serve warm with preferred sauce.

Congratulations on your attitude towards a newer way of life. I do not have diabetes; however I am hypoglycemic which means I cannot eat like cake with icing, or icecream. I adore sorbet, as it is not so sweet and leaves out. your questionaire about diabetes does not apply to us; however it is good for each of us to learn to live and enjoy diabetic meals. Oops. Use this one instead. You can use Old Bay instead of cayenne. Tracy baked instead of fried for 20 minutes at 400 degrees. She then turned off the oven and let it sit for another 10 minutes.

I can't really rate this recipe since I haven't cooked it yet, but it sounds pretty good. The only thing I would eliminate is the cayenne pepper and salt and add Old Bay seasoning instead. Being a Maryland girl, I am faithful to my Old Bay!

I am forever looking up recipes of yours you cook on the show or in one of your cookbooks I purchased. The names of the recipes are named in a way I cannot find the ones I want to cook. I like to experiment, but some of yours are my favorite and I cannot find them by saying- lemon meringue pie, you will have it listed as Aunt Paulines ????? Pie and I can't find the simple, plain old fashion, not w/condensed milk, lemon pie you have prepared on your show. Please make this a simple task for me. Delicious. Not exactly easy getting them in the hot oil( I used coconut oil). I had to add the flour to the top of the cake after it was in the skillet. It made six generous servings. I also added a dash or two of Old Bay Seasoning.Will definitely pass this one on and save it for company too. Thanks Paula. Joanne
