1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
Shredded Medium Cheddar Cheese
In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream, and butter. Pour into a greased casserole. Bake at 350 degrees for 40 to 45 minutes, or until golden brown. Top with generous amount of cheddar cheese and return to oven for another 5 minutes until cheese is melted.

I used the corn casserole as a dip for a christmas party. I served it warm, each guest could top it off with sour cream and salsa. It was a hit. I made two pan, and it was still not enough. Thanks for another "Keeper"

I have been making this for years. Being from the southwest, we add a can of diced green chilies to it. It really gives it a fantastic flavor, without too much heat. I have used a white cheese mixtures as well. Yum!

I love love loved this. I made it at Thanksgiving and am making it again for Christmas dinner. I also added 2 beaten eggs. My intuition just told me that it 'needed it' I don't know what it's like without the eggs, but it's fluffy almost like a corn fritter this way. YUM YUM YUM

I tried doubling a similar recipe once....I won't do it again in the same dish...took too long to cook! I'm making a double batch tonight for tomorrow and will heat up. This dish keeps fine overnight! Enjoy! Best Thanksgiving dish ever!
