Recipe Courtesy of Paula DeenA traditional southern favorite that will go great on your table too, collards are a new years tradition in the south as well!
Servings: 4 to 6 servings

Cook Time: 2 hours

1 large bunch collard greens
1 tablespoon Paula Deen’s Seasoned Salt
1 tablespoon Paula Deen’s Hot Sauce
1/2 lb smoked meat (ham hocks, smoked turkey wings, or smoked neck bones)
1 tablespoon butter
In a large pot, bring 3 quarts of water to a boil and add smoked meat, house seasoning, seasoned salt and hot sauce. Reduce heat to medium and cook for 1 hour.
Wash the collard greens thoroughly. Remove the stems that run down the center by holding the leaf in your left hand and stripping the leaf down with your right hand. The tender young leaves in the heart of the collards don’t need to be stripped. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 to 1-ince thick slices. Place greens in pot with meat and add butter. Cook for 45 to 60 minutes, stirring occasionally. When done taste and adjust seasoning.
Serve with favorite dish as a side.

I know this is late, but to answer Mary's question...House Seasoning is a seasoning recipe Paula came up with. It's a mixture of salt, pepper and garlic powder. A lot of the recipes that ask for it gives you the exact measurements. It's so yummy and brings out a burst of flavor in your dish!! Thanks Paula!

I am going to try this recipe for the first time, but am a bit confused...what is the "house seasoning" that is mentioned in the directions of how to prepare this dish? The only seasoning that is on the list of ingridients needed are seasoned salt and hot sauce...At any rate, I chose this recipe based on the wonderful reviews that are listed, ease of preparation, AND...I found a 2lb bag of collard greens already cut into strips on sale! YEA!!

I have a great story about Paula's collard greens ! My sister and I lucked up and got to eat at Paula's Restaurant in Savannah without waiting in the long line one a sat.,we sat in the bar area.We decided to have the buffet,so we tried to taste a small bite if everything.I ask my sister did she get the collard greens and she said no,she didn't like them.Well I told her to try a small bite to see if she would like them, well she was back to the buffet bar 3 times for more Paula Deen collard greens. Well every since then at my mamas house when we do the big family get togethers we always cook the collard greens by Paula's recipe and everyone loves them now,not boiled then fried in a castiron frying pan like mama had done for years"YUCK"!! Thanks Paula,.. for the GOOD COLLARD GREENS !!!

Paula, I absolutely just love collards and make them similar to your recipe but have never taken the stem off as you do and think I am going to try it. I am so glad you are on my Facebook as I am bringing good ole southern collards to my brothers for Thanksgiving dinner. Our "whole" family will be together this year! Hope you have a wonderful day!

A New Years Day Paula Dean Dinner - and it was a huge success! I cooked Paula Deen's Black-Eyed Peas, Collard Greens and Corn Casserole. My brother, who wasn't really hungry, had two helpings of everything. He raved. He called to take to work to share with a co-worker. He said people don't realize what a great cook I am. LOL THANKS, PAULA!
