Recipe Courtesy of Paula DeenServings: 4 servings
Prep Time: 1 hour 10 min
Difficulty: Easy
1 tablespoon fresh dill
1/4 cup sour cream
1/2 cup mayonnaise
1 teaspoon vinegar
1 teaspoon salt
2 cucumbers
Fresh ground pepper
Peel and slice the cucumbers and put them in a glass bowl. Sprinkle them with salt and vinegar. Cover and let stand for 1/2 hour. Pour off the excess liquid and strain in colander for about a 1/2 hour to allow complete drainage. Add the mayonnaise, sour cream, pepper and dill, and mix well. Cover and refrigerate until serving time.

I love this cucumber salad. I do this with just a little different version. I use the mayo and sour cream, a little sugar, a lid of white vinegar, a little milk,& salt & pepper for the dressin. I also add cherry tomatoes, red onion slices, and brocolli and cauliflower florets. This is always a big hit with company.

I was all excited about the cool cucumber salad until I read the directions and it said to add the sour cream and dill? This was not listed in the ingredients. I am disappointed! I have been a Paula fan since her days of the old Ramada Inn Restaurant. I am happy for her success but I miss the old down home Paula.

I make this all the time. My mom always made this when we were kids. I introduced it to my b/f a couple years ago, he thought I was crazy, but he absolutely loves it. I also got him started on watching YOU,lol...He loves you and thinks your are a riot. Every time I make a dish, especially with butter, he says "Your girl Paula would be so proud"..lol I tell him one of my dreams is to go to your restaurant. Hopefully when I'm finished my chemo treatments we are taking a road trip to Savannah... ![]()
