Chocolate Cheese Fudge

Ingredients:

1/2 lb processed cheese, sliced or cubed
1 cup butter
1 teaspoon pure vanilla extract
1 cup chopped nuts, pecans, walnuts
2 16-ounce boxes confectioners’ sugar
1/2 cup cocoa

Directions

Spray lightly the bottom of a 9x2 inch square pan with a nonstick spray.

Using a saucepan over medium heat, melt the cheese and butter together, stirring constantly until smooth. Remove from heat and add the vanilla and nuts.

In a large bowl sift together the sugar and cocoa. Pour the cheese mixture into the sugar and cocoa mixture and stir until completely mixed. The candy will be very stiff.

Using your hands, remove candy from bowl and press evenly and firmly into pan. Because of the amount of butter in this recipe, pat the top of the candy with a paper towel to remove the excess oil. Place pan in refrigerator until candy is firm.

To serve candy, cut into squares.

I made this recipe during the christmas holidays and everyone loved it. It was seriouly the best fudge i had ever tasted. So good, in fact, I put it in the book i'm attempting to publish "The Curious Cook". I did say where I got the recipe from. Hope thats okay, paula:) Your biggest fan, Christina:)

I made this a few years ago and it was very comparable to chocolate cheese I have gotten in Wisconsin in years past, minus the long drive to get it. The velvetta does have a distinque taste that you can notice, and the oiliness is not very pleasant but we did like it because the sweetness is not as intense as regular fudge. I would make again if requested by my family

I love this fudge. My family went "ugg" when I mentioned the cheese, but it didn't stop them from eating it. This fudge has a very creamy, smooth texture.

I made this a few years ago and now it is requested every year by family and friends...try the Peanut Butter Cheese Fudge too, it's GREAT too!

I sampled after my sister made this recipe. I thought the chocolate flavor was weak. I'd suggest increasing the amount of cocoa. I also thought the cheese made the fudge too salty. I did not care for it but other family members did.
