Recipe Courtesy of Paula DeenServings: 12 sandwiches

Difficulty: Easy
2 tablespoons fresh lemon juice
1/2 cup mayonnaise
1 teaspoon salt
1 teaspoon pepper
3 1/2 cups finely diced cooked chicken
1 cup finely diced celery
1/3 cup slivered almonds
12 mini slider rolls
In a small bowl, combine the lemon juice, mayonnaise and salt. Toss with the chicken, celery, and almonds in a medium bowl. Serve on mini slider rolls.

Dear Miss Paula, Much like your own sons, I too love to ccok. Mom always said that when the other kids were outside playing, I wanted to be with her in the kitchen to help mama cook. She would put my little rear on the counter and let me stir! I am a hairstylist and salon owner of 33 years by trade, but my soul is in food...I catered out of my kitchen, (which is a one person kitchen) many special events for hundreds and small weddings of 100 or so in our backyard. People are truly amazed at the delicious food that comes out of that small space. Keep on a cookin with your sons, because there is no recipe for mom and son lovin in the kitchen. Great recipe...except don't add the salt or pepper! I made that mistake and I won't make the same mistake again....I also suggest using walnuts instead of almonds and to add some grapes. YUM!Other than that the recipe is AWESOME!

Gotta share this with you. My friend sent me an email that said." Southerners call pecans pee-cans. The only pee-can I know about is one you carry in the car on a trip." I really like chicken salad Expecally when U do not add oions ! I usually have them served on the side, with a few sliced (cuqumbers)I love to experment in the kitchen & most of the time its great cooking .
