Recipe Courtesy of Paula DeenServings: 6 to 8 servings

Difficulty: Easy
1 10 3/4 ounce can condensed cream of celery soup
1 4 ounce jar pimentos
1 8 ounce can water chestnuts, drained and chopped
2 14 1/2 ounce cans green beans, drained and rinsed
3 cup diced cooked chicken
1 medium onion, peeled and diced
2 tablespoon butter or vegetable oil
1 cup mayonnaise
1 6 ounce box long-grain wild rice, cooked according to package directions
1 cup grated sharp cheddar cheese
1 pinch salt
Preheat oven to 350 degrees F.
Heat butter or oil in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.
Add all remaining ingredients to bowl and mix together until thoroughly combined.
Pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly. Let stand for a few minutes before serving.

Paula... my grandmother just bought your 4.5 qt casserole (stoneware) dish for me today because it matches the pie plate my wife bought for me last year(xmas is awesome)... I absolutely love it, so I had to try this recipe to christen it... needless to say, it was a smash!! Thank you for your great recipes and excellent cookware... I cannot stress the quality your stoneware provides, and how impressive it looks coming straight from the oven to the table... brilliant!!!

This casserole is wonderful. I added a small can of green chilies. It gave it a little kick. Also instead of just plain long grain rice, I changed it to Knox Chicken and Rice. It made it taste wonderful.

I'm not a fan of water chesnuts so I substitute Durkee Onions instead. To make this delicious casserole even easier, I use Uncle Bens Rice that comes in a pouch, you just vent the sides and microwave for 90 seconds! To make this recipe stretch further I also add another bag/variety of rice and mix it together with the Long Grain Wild Rice one. Hint: Save some Durkee Onions for the top, but add on at the last 5 minutes and watch because they burn easy.

I have made this chicken and rice casserole several times, and it is SO good! I made it without the mayo (by mistake!), and it was still very good, so that's nice to know if you're watching calories. Yours is the only cooking show I can stand to watch...you make "real" food that I would actually eat! And my favorite part? That you EAT the food, and we can tell that you're enjoying it! Made your casserole, however, I did not have sharp cheddar cheese, so I used Swiss instead. It was absolutely marvelous. Can't imagine making it any other way.
