Chicken and Rice Casserole

Ingredients:

1   10 3/4 ounce can condensed cream of celery soup
1   4 ounce jar pimentos
1   8 ounce can water chestnuts, drained and chopped
2   14 1/2 ounce cans green beans, drained and rinsed
3 cup diced cooked chicken
1   medium onion, peeled and diced
2 tablespoon butter or vegetable oil
1 cup mayonnaise
1   6 ounce box long-grain wild rice, cooked according to package directions
1 cup grated sharp cheddar cheese
1   pinch salt

Directions

Preheat oven to 350 degrees F.

Heat butter or oil in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.

Add all remaining ingredients to bowl and mix together until thoroughly combined.

Pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly. Let stand for a few minutes before serving.

This was very easy and very, very tasty!!! I used french style green beans and fiesta Mix cheese blend because that was all I had and wow!!! This is the best thing I have prepared in a very long time! Thanks Paula

I had this at Harrah's Tunica, and I swear it had asparagus in it. The first time I made it I followed the recipe and it was close, but now quite there, the second time I substituted one can of green beans for asparagus, and now I just use asparagus instead of green beans altogether, and double the cheese. Also, I'm pushing 35 to 45 minutes before it gets bubbly, but that just may be my oven...

I made this recipe for my husband, my VERY picky 19 year old nephew and one of his friends. They LOVED it. I added more cheese to the mixture, added french fried onions on top (or you could use ritz crackers with melted butter) and more shredded cheese on top. Yumm -o.

I made this casserole for my grandmother after she had surgery. It was easy for her to eat and both my grandparents LOVED it! The ingredients are simple, but the combination is delicious! The ease of preparation for such a great result is has made this recipe a keeper in my personal cookbook and a definite go-to for potlucks. Wonderful! Thank you Paula Deen!
