Servings: 5 Servings

Cook Time: 20 min
Difficulty: Easy
1 teaspoon chili powder
1 cup shredded parmesan cheese
1/2 cup mayonnaise
5 ears corn, shucked
1 teaspoon salt
1 teaspoon freshly ground pepper
Prepare grill.
Spread a thick layer of mayonnaise on corn, and dust with cheese, chili powder, salt, and pepper. Wrap corn in tin foil and place on hot grill. Turn occasionally and cook for about 20 minutes (until kernels begin to brown).

I think it's awesome! I love it the way it is and it works with the foil (you might have to use a spoon to get more of it up but that's no big deal).

This corn is Mexican style EXCEPT it shouldn't be re-wrapped in aluminum foil. (I understand the grilling aspect) This style of corn is sold in predominantly Mexican neighboods and grocery parkinglots..and is exceptionally delicious! The corn is freshly cooked, they spear it on both side, spread mayo and sprinkle mexican cotija or if you can't find it powdered parmesan cheese. Then they ask if you want chile. Grilled corn is soo good plain,but I've never seen it prepared this style.

Try using mayonesa (a Mexican mayonnaise that has lime juice in it...even Kraft makes one now). It is even better with that!!!

When I saw Paula make this on the show....I was so excited to make this. The first time I made this, all the "Stuff" was burnt/infused to the foil & not on the corn. Tasteless. She doesn't say if direct heat or indirect heat & high, medium or low heat????!!!! I had to try it again!!! The second time I made this, I tried medium direct heat, the "Stuff" wasn't infused this time, but still the corn was tasteless.

I saw this recipe on the show and had to try it. It was a huge crowd favorate. I now make it everytime I grill out. It is quick and easy and a no brainer.

I love love love this recipe. My husband hates mayonnaise but you cant even taste it. Its a must have when the grill gets going!
