1/4 teaspoon nutmeg
Streusel topping (recipe follows)
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 granny smith apples, peeled, cored and finely chopped
2 large eggs
1/2 cup plus 2 tablespoons sugar, divided
1 cup (2 sticks) butter, softened
2 (8 ounce) packages cream cheese, softened
1/2 cup firmly packed brown sugar
2 cup all purpose flour
1/2 cup caramel topping
Streusel Topping
1 cup firmly packed brown sugar
1 cup all purpose flour
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened
Preheat oven to 350 degrees F.
In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender until mixture is crumbly. Press evenly into a 13-by-9-by-2 inch baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
In a large bowl, beat cream cheese with 1/2 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
In a small bowl, stir together chopped apples, remaining 2 tablespoons sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture. Sprinkle evenly with Streusel topping. Bake 30 minutes, or until filling is set. Drizzle with caramel topping.
Streusel Topping
In a small bowl, combine all ingredients.

These are the best ever! I have made them several times and always get asked to make more! It makes a huge batch. Everyone raves about them. I agree with someone else that said to refrigerate them before you cut them. Makes it much much easier. I make them at night - pour the caramel over the top whenthe bars are warm and let them set overnight. Then the next morning - they come out of the pan with ease - I cut them into small bite size pieces and I drizzle a bit more caramel on the top. PERFECTION!

Absolutely delicious! Recipe was perfect...no changes necessary. Only comment to make is that I chilled them before lifting out of the pan to cute them, which made it super easy to get them out and not break. Made them to give as a gift and honestly, they were lucky that I rescued them to put on a plate and get them out of the house! Very good, and just what I was looking for to have a nice fall treat.

These are great. Needed to cook longer than stated. I also did not use oats and would cut streusel topping in half next time. Amazing flavor!!!

These were great. I chopped the apples up very fine in a food processor and this worked great--no big hunks of apples deal with and made the spreading much easier. I made these and shared with my co-workers and a group of bank employees--they all loved them. I have been asked to make them again for the Bank's chili cookoff. Karen Jeffries
