Prep Time: 30 min
Cook Time: 30 min
Difficulty: Moderate
2 1/2 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/2 cup milk
1/2 cup vegetable oil
1 stick butter
1 cup sugar
3 eggs
For Decorating:
3 cups coconut, shredded
18 large marshmallows, cut in half
36 mini marshmallows
Black licorice rope, for whiskers
colored chocolate candies or jelly beans
Vanilla Buttercream Frosting:
Ingredients:
2 sticks butter, room temperature
8 cups confectioners’ sugar
1/2 cup milk
2 teaspoons vanilla extract
Preheat the oven to 350º F.
In a large bowl, whisk together the flour, salt, baking powder and baking soda.
In another bowl, whisk together the vanilla extract, milk and vegetable oil.
Cream together the butter and sugar with a hand-held mixer in a large bowl. Add the eggs 1 at a time and mix to combine. Alternate the dry and wet ingredients to the egg mixture, starting and ending with the dry ingredients.
Pour the batter 2/3 full into paper lined cupcake tins and bake for 15 to 20 minutes. Remove from the oven and allow to cool before frosting and decorating.
Vanilla Buttercream Frosting:
In the bowl of a standing mixer, cream softened butter and add 4 cups sugar, milk and vanilla. Beat with paddle attachment until smooth gradually add the rest of sugar to reach frosting consistency
To Decorate:
Frost tops of cooled cupcakes with a thick layer of frosting and dip into coconut (pressing down into the coconut). Place one half of each large marshmallow on an angle for each ear (note: you might have to use a little frosting as glue). Add colored chocolate candies for eyes and nose. Add two miniature marshmallows for cheeks. Cut 6 small pieces of rope licorice for whiskers. Share with “somebunny” you love!

Hi Paula, I found this recipe for Easter Bunny cupcakes on your 2012 Calander and made them for the employees of Friendly's in East Longmeadow, MA. They came out great and everyone loved them. Only thing, I couldn't find the shoestring licorice so first I broke up some thin spaghetti to use for whiskers then I used the red Twizzler licorice and tried to slice it in thins strips. wasn't easy but it did the trick. Loved the Buttercreme frosting too. Thank you Paula.

hi i'm looking for really really cute easter cupcakes ,but my cuz is allergic to coconut so I can't have any coconut. what should i do?
By Kimmy on April 16, 2011
Love these cupcakes. I take 2 circus peanuts (those orange marshmallow things) cut about 1/4 off each on and insert a toothpick and then poke the toothpick into the cupcake so they look like huge feet. Also if you cut the marshmallows on an angle then they come to a point. Most recently spent an afternoon at the school my daughter teaches at decorating these with a classroom full of energetic 2nd graders.

I PUT THE CUT UP CABBAGE IN WATER then WHEN THE Grease is hot I drop the cabbage in with a little water dripping from the cabbage. Add a lid and let it steam until it is done.Add fried Hamburger meat after the cabbage is done . I also sub corn beef hash that is in a can instead of the hamburger meat. That is the only way my family would eat cabbage.

Here is a great recipe for children that are kidney patients, or diabetics. Fruit whip ice cream cones.
Take a block of cream cheese, softened, fold in a cup coolwhip, a cup of blue berries, and a teaspon of blueberry jam or grape jelly. spoon into ice cdream cones and let these set in fridge.
I put plastic wrap over them.
Now you can variate this to strawberries, and strawberry jam, or fresh pineapple chunks, and orange marmalade.

I had made some of your cupcakes with the cream filling in them from one of your magazines for a birthday party. They were such a hit. We might have had maybe two left out of 3 dozen. A course they didn’t make it through the night..lol. I always love your meals that I have tried. It is such a joy to watch you on TV. You are so down to earth as if your family. It would be something to ever get to meet you. We love ya Miss. Paula The Walden Family

I am printing these directions for my Easter weekend. I too will have my grandchildren who love to help grandma in the kitchen. I have two stools that sit at the island where I mix and create our meals. Allie and Flynne always are there when grandma is cooking. They will love making these bunnies.
