Difficulty: Easy
Glaze:
1/4 cup ketchup
1 tablespoon Dijon mustard
2 teaspoons packed light brown sugar
Meatloaf:
2 pounds ground beef
1 medium onion, finely chopped
3 tablespoons ketchup
2 large eggs
1 slice white bread, torn into pieces
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
Preheat the oven to 350 degrees F.
In a small bowl, whisk together all the glaze ingredients and set aside.
In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 9 by 5-inch loaf pan. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more. Remove from oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.

This is by far the best meatloaf ever...ive tried it more then once an everytime its a hit n my house . The glaze is so good at first u think how is this gonna taste but when its all done its soo go ur gonna want make this glaze everytime u make a meatloaf love it ... Thanks ![]()

Love this meatloaf receipe!!! One suggestion for any meatloaf- after putting mixture in pan you should slap the mixture a few times to get the air bubbles out. This results in the meatloaf retaining it's shape instead of falling apart when serving.

Hi Paula, You might try this next time. Soak your bread and eggs in just enough milk to moisten the bread, take a fork and lightly beat after sitting for about 5 min. put in your gr. beef and work with the hands. Also, maybe about a quarter cup of green and red pepper. Gives it such a delicious taste. Also add some chili powder, onion and garlic powder. Yummmmmy!

A very simple recipe, just what my husband prefers! I tend to get very creative and add everything but the kitchen sink!! Last meatloaf I made I used ground beef & ground pork, onions, shredded carrots, mashed potatoes, seasonings, parmesan cheese & mexican cheese (LOL), ground flaxseed mean (instead of bread crumbs) and a 1/4 cup of Trader Joe's Sweet Potato 'n Red Pepper Soup! He said, "there's too much going on in there." LOL And, believe it or not, I thought it tasted bland!! SO will definitely try Brooke's meatloaf recipe and I bet he'll love it!!!

Brooke, I really like this meatloaf receipe because most of us have the ingredients without running to the market. You can always add ingredients if your feeling creative. Don't get me wrong, it is delicious as is, but allows for adding in leftovers like the little bowl of corn left over from last nights dinner or those 2 celery stalks left in the veggie drawer in the frig. I like to get creative! Great receipe!
