Brooke’s Homemade Meatloaf

Ingredients:

Glaze:
1/4 cup ketchup
1 tablespoon Dijon mustard
2 teaspoons packed light brown sugar

Meatloaf:
2 pounds ground beef
1 medium onion, finely chopped
3 tablespoons ketchup
2 large eggs
1 slice white bread, torn into pieces
1 teaspoon salt
3/4 teaspoon freshly ground black pepper

Directions

Preheat the oven to 350 degrees F.

In a small bowl, whisk together all the glaze ingredients and set aside.

In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 9 by 5-inch loaf pan. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more. Remove from oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.

I love this recipe. My friends and family can't figure out how I have so many different cooking ideas or how I never mess it up. I told them, "Have u seen my kitchen? I have Paula fever!" This was fantastic!! The use of just the white bread made the meatloaf so light. The glaze was terrific also we have chosen to double the recipe for the glaze though (can't have too much of a good thing!) to use as a dipping sauce. I had been using an old family recipe to make meatloaf but this has replaced it!!! Thanks Brook and Paula!!!! Ronda (Carpentersville IL)

it was easy and the sauce was amazing. I had to use Honey Dijon Mustard instead but it was still AMAZING. I would recommend this one...THUMBS UP!!!

This was a family pleaser! I've not had much success with meatloaf recipe's however this one was terrific. I would suggest doubling the glaze as I ran out and had to make more. Other than that, this was great!

Love this simple meatloaf. I substitue the 3 tbls of ketsup with Paula's Smoky Apple Cinnamon sauce -LOVE IT! I have Crohn's disease and even though I'd love to have all the spicey, extra fancy meatloaf - this one allows me to have a great tasty meatloaf!
