Ingredients Add to grocery list

2 10-ounce packages frozen chopped broccoli, cooked and drained
1 cup Mayonnaise
1 cup Grated sharp cheddar cheese
1 10 3/4-ounce can condensed cream of mushroom soup
2 eggs lightly beaten
2 cup crushed Ritz crackers
2 tablespoon butter, melted

Directions

Preheat oven to 350.  Spray a 13 by 9 inch baking dish with vegetable oil cooking spray. In a large mixing bowl combing, broccoli, mayo, cheese, soup and eggs.  Mix well with a metal spoon.  Place the mixture in the prepared baking dish.  Top with the crushed crackers and pour the melted butter evenly over the crackers.  Bake for 35 minutes or until set and browned.

Broccoli casserole has always been a staple at my house. We're not big on the mayo thing either so I use 2 cans of cream of mushroom soup (98% fat free) and no mayo. I would also add garlic and onion salt.

Hi, I've never made broccoli casserole before. Does anyone know if you can substitute something for the mayo? I'm not a big mayo fan... Would it be god with cottage cheese in it? Or is that a bad idea? Thanks!!

nasty with too much mayonnaise. that's all you could taste. didn't have grated cheese so used shredded but don't think that would make enough difference. will try it again cutting the mayo in half. has anyone else had that problem?

I looove broccoli casserole and this didn't disappoint. I've tried it both ways; one with cream of chicken soup and one with cream of broccoli. To me, the cream of chicken is SO much better with broccoli. I've also tried it with Ritz and Keebler Club crackers--- the Club crackers get crispier in the oven! Yum!

My usual vegetable dish for the holidays is a big ol' pot of collards. Well, the store had slim pickens and my husband came home with more broccoli then I knew what to do with. So I searched the internet for broccoli recipes and came upon this one. I had everything needed to get the broccoli in the oven and on the table. Only thing is, some of my guests had issues with mushrooms. I had a big family-sized can of cream of chicken soup and figured that would have to do instead of the cream of mushroom soup. So with that being the only change, I made the casserole. Everyone said that this dish was the hit of the dinner! I had crab-stuffed beef tenderloin on the menu and that took a distant second to the broccoli. Who knew? Thanks for a good recipe and some nice compliments that came with it!

I am going to try this recipe for Christmas! I usually just buy it bcuz im the only one who eats it. Well more for me! Thank God for u bcuz ever since my Granny died I do the cooking at holidays and she took the recipes with her. I suffer from anxiety disorders so I turn to cooking. U inspire me and ur books have given me some of the memories and all the love of my childhood! Im 37 and have an 18 year old who bakes. Thank God for u and best blessings to ya from my house to yours, by the way some of the best fried chicken was when my granny cooked while smoking! Keep in mind that ingredients can be modified. Fresh broccoli, 98% fat free mushroom soup, low fat mayo, reduced fat shredded cheddar cheese, butter substitutes, and you can leave out the crackers. Keep in mind, though, it's Thanksgiving and we only get to enjoy this holiday once a year with family and friends! smile
