2 teaspoons olive oil
1 pound Italian turkey sausage, casings removed
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
1 (32-ounce) container chicken broth
1 (15-ounce) can tomato sauce
1 (14 1/2-ounce) can petite diced tomatoes
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
4 ounces broken whole-wheat lasagna noodles (about 4 noodles)
1/2 cup chopped fresh basil
3 tablespoons grated parmesan cheese
1/2 cup reduced-fat shredded mozzarella cheese
8 Whole-wheat breadsticks or grissini (optional)
Heat the oil over medium-high heat in a large nonstick saucepot or Dutch oven. Add the sausage, onion, bell pepper, and garlic. Cook over medium-high heat, stirring occasionally, until the sausage is crumbled and browned, 8 – 10 minutes.
Add the broth, tomato sauce, diced tomatoes, salt, and crushed red pepper. Bring to a boil. Reduce the heat and simmer, stirring occasionally, until the flavors are blended, about 20 minutes. Add the noodles; bring to a boil. Reduce the heat and simmer, uncovered, stirring occasionally, until the soup thickens slightly and the noodles are tender, 10 – 12 minutes. Remove from the heat; stir in mozzarella, basil, and the Parmesan. Serve with the breadsticks, if using. (whole-wheat lasagna noodles take a little longer to cook.)

Made this for dinner this evening and it is a bit on the salty side and I generally like my food a bit salty. The saltiness is Possibly due to the boxed chicken stock or the salt already in the turkey sausage. It may be best to taste then add salt as desired rather than follow directions. I was also somewhat disappointed with how watery/runny the broth was, I was hoping for something that would thicken up a bit. I will definitely be trying the "fatter" Paula version sometime in the future.

This soup is SOOO good, I want to make it like twice a week, but I don't want my husband to get tired of it, so I try to control myself. I don't use turkey sausage though, I use ground turkey seasoned with Italian seasoning and sage, and I add fresh spinach before simmering. Very good.

This recipe was delicious and although "light" very filling. I added mushrooms to the meat and onions. When I prepare again, which will be very soon, I am going to add zucchini and or spinach since my family is huge on veggies:) Thank you for another great recipe that my whole house enjoyed.

I love Paula Deen's food. People pick on me,calling me little Paula because I do her recipes. I really enjoy watching the show and I pray that some day I can go to her resturant in Georgia. I would love to see her in person as well. That would be a treat. She is wonderful on television and I would love to hang out with her in person. Paula is my girl, she just don't know it yet. This is such a great recipe that within a few days multiple people have asked me for it! The directions kind of cut off so I added the basil with the noodles and the parmesan cheese right after that. I added the mozzarella right when I served it. I have also made it with pork sausage too. This is a must try!

I was scared out of my mind a few months ago when I thought I had Diabetes. I co-own a restaurant with my mother and HAD poor eating habits. I made this soup for the Superbowl and it was a big hit. I used very lean ground turkey instead of the turkey sausage and omitted the salt.
I also found the petite tomatoes with garlic/basil/oregano added in. My teenage son even liked it. Thanks…keep them coming!
